The Sommelier is responsible for overseeing the daily wine program at Florieās, including wine service, inventory management, staff education, guest engagement, and wine list development. This position works closely with restaurant leadership and culinary teams to ensure beverage offerings complement the dining experience while reflecting the philosophy and standards of Florieās. This role is part of the Food & Beverage division and reports to the Director of Restaurants. Ā

What you will do:Ā
Lead and oversee all aspects of the Florieās wine program, ensuring exceptional service and guest satisfactionĀ
Provide expert wine recommendations and pairings that complement the culinary experienceĀ
Describe menu offerings, wine selections, and beverage pairings through engaging and detailed guest interactionsĀ
Build relationships with guests while anticipating preferences and creating personalized experiencesĀ
Manage and maintain wine inventory, cellar organization, and stock levels for Florieās restaurant and lounge operationsĀ
Complete wine ordering and collaborate with vendors, suppliers, and distributors to maintain an exceptional wine collectionĀ
Assist in developing and refining wine lists that align with Florieās culinary vision, guest preferences, and business objectivesĀ
Conduct wine tastings, educational experiences, and special events for guestsĀ
Lead wine education and training programs for restaurant and Food & Beverage teamsĀ
Ensure proper wine storage, handling, service temperatures, decanting procedures, and glassware standardsĀ
Collaborate with culinary leadership to develop food and wine pairing experiencesĀ
Monitor beverage sales performance and identify opportunities to drive revenue growthĀ
Support operational leadership in maintaining outlet standards, service execution, and guest experience initiativesĀ
Assist with reporting, inventory controls, procurement systems, and beverage-related administrative functionsĀ
Participate in regular operational meetings and contribute to ongoing service and product enhancementsĀ

What you bring:Ā
Sommelier certification required (Court of Master Sommeliers, WSET, or equivalent)Ā
Previous experience as a Sommelier, Assistant Sommelier, or beverage leader in a luxury hotel, fine dining restaurant, or Michelin-recognized environment preferredĀ
Strong knowledge of wine history, viticulture, vinification, sensory evaluation, wine service, and beverage lawsĀ
Comprehensive knowledge of food and wine pairing principlesĀ
Strong leadership, coaching, and employee development skillsĀ
Experience managing wine inventories, purchasing, and vendor relationshipsĀ
Excellent communication, presentation, and guest engagement skillsĀ
Strong business acumen with an understanding of sales, inventory management, and profitabilityĀ
Proficiency with Microsoft Office, POS systems, inventory systems, and procurement platformsĀ
Ability to read, write, and communicate effectively in EnglishĀ
Passion for hospitality, continuous learning, and exceptional guest serviceĀ
