Excelsis are looking for a CDP TO Join one of the best golf clubs in the South of England.

Job brief:

As a Chef De Partie (CDP) you are responsible supporting the Head and Sous Chef in the kitchen, delivering consistently high-quality food and implementing food safety procedures.

Chef de Partie Duties and Responsibilities:

  • Daily food preparation and duties as assigned by the Head/Sous Chef
  • Estimate daily production needs
  • Check quality of raw and cooked food products to ensure that FHGC standards are met.
  • Full awareness of all menu items, their recipes, methods of production and presentation standards.
  • Follow the correct policy for the handling of all food products at the correct temperatures as laid out in the FHGC Food safety policy
  • Operate and maintain all department equipment and reporting of malfunctioning/breakages
  • Ensure effective communication between staff by maintaining a secure and friendly working environment.
  • Personal responsible for hygiene, safety and correct use of equipment and utensils
  • Ability to produce own work in accordance with deadlines and to assist and encourage others in achieving this aim.
  • Check expiry dates and correct storage of food items in the kitchen
  • Consult daily with Sous Chef and Head chef on daily requirements, functions and events.

Prerequisites:

A high standard of spoken and written English.

Flexible working hours subject to the demands of the business.

Enjoy working under pressure.

Excellent culinary talent and a proper interest in food

Experience:

At least 3 years experience cooking in a well-established restaurant or full-service hotel

Requirements:

  • 2+ years as a CDP
  • Experience of large event catering
  • Display an understanding of various cooking methods, ingredients, equipment and procedures
