Kitchen Manager/ Head Chefrequired for a new high end Deli, Food Counter & Restaurant opening later this year. The concept will have a Gourmet food store selling amazing produce. The other side of the operation is where the Kitchen Manager / Head chef will manage. You will oversee the Sushi counter, the Butcher counter, the hot Spanish counter and the restaurant area. Each area will have a Senior Sous chef who will run the area on a day to day basis. This role will look after the stock count, HACCP, COSHH, rotas, and suppliers. The Sushi Chef, Spanish Counter Senior Sous chef, Breakfast chef, Butcher and Restaurant table Senior Sous chef all report into this role. £45k-£53k.


The role
We are looking for a Head chef to manage the various parts of the food side of this operation. The key part of the role is working with the suppliers to ensure the food is ordered, you will ensure the COSHH and HACCP is all correct and the food hygiene standards are fantastic. You will also do the stock taking. The various heads of each sections of the concept will report into you, each section head will design the food offering/menu for there section but will report into you from a operational point. This role is more office/paper based with a small amount of prep / cooking when required if someone was off. This role will include all the standard head chef / kitchen manager duties.


Experience
We are looking for a head chef with a food understanding of Spanish produce, this is really important to understand Spanish meats. You will also have good knowledge of food control, food rotation, food presentation, HACCP, COSSH etc.
