Around 90 percent of your time is spent in service.

You lead a medium-sized front-of-house team and set the tone every shift.
What you will do
Lead from the floor during all peak services
Own guest experience from door to dessert
Support and challenge the front of house team in real time
Run busy, high-pressure services to premium standards
Work closely with the kitchen to protect food quality and pace
Train and develop supervisors and senior team members
Handle VIPs, regulars and complaints with confidence
Support the GM with rotas, labour and day-to-day operations
Step in as the lead manager when the GM is off-site
What you must bring
Experience in a premium, high-volume restaurant
A strong service background with real floor presence
Proven ability to lead large services, not just manage shifts
High standards and an eye for detail
Confidence engaging with guests and team alike
Commercial understanding without hiding in the office
