The Role - What You'll Be Responsible For
As Restaurant Manager, you'll take full ownership of the day-to-day operation across multiple outlets:
Day-to-Day Responsibilities
- Lead daily restaurant service, ensuring flawless execution across breakfast, lunch, and dinner services.
- Manage the restaurant, bar, terrace, and private dining operations, ensuring consistency in quality and guest experience.
- Oversee and support weddings, celebrations, and private events, ensuring smooth service and high standards.
- Create and deliver pre-service briefings, training sessions, and team development plans.
- Maintain and elevate service standards in line with multi-Rosette expectations.
- Work closely with the Head Chef and kitchen leadership to coordinate menus, seasonal changes, and guest experience.
- Develop wine knowledge within the team; support pairing menus and wine recommendations.
- Lead on staffing: rota creation, forecasting, recruitment, onboarding, and performance management.
- Drive revenue through upselling, guest engagement, and exceptional hospitality.
- Monitor budgets, GP targets, stock levels and P&L performance of the restaurant and bar.
- Ensure compliance with H&S, licensing laws, allergen procedures, and company audits.
- Deliver a visible, hands-on leadership presence on the floor - especially during peak service.
What You'll Bring
Essential
- Experience in a multi-Rosette, fine-dining or high-end restaurant at Assistant Manager or Supervisor level.
- Proven ability to lead a team through busy services while maintaining calm and professionalism.
- Strong food and wine knowledge with a passion for guest experience.
- A natural coaching style - confident in giving feedback and training staff.
- Excellent communication, organisation and problem-solving skills.
- Ambition and readiness to step into full departmental leadership.
Desirable
- WSET qualification or strong interest in wine training.
- Experience in managing events or private dining services.
- Previous involvement in budgeting, rota planning or stock control.
- Exposure to bar operations, cocktails, or terrace service.
