Job title: Sous Chef Back of House
Reports to: Head Chef
Integral to the smooth running of the kitchen, the Junior Sous will be responsible for their own section. You will also be expected to have a flexible approach to ensure that the kitchen team delivers high quality food and that your section is fully mise en place. This means you must have all your ingredients measured, cut, peeled, sliced etc. before you start cooking. All equipment is set out and prepared so that you can assemble meals quickly and efficiently.
Assisting the Head Chef in creating menu items, recipes and developing dishes
Preparing, cooking and presenting high quality ingredients for your section
Assisting with the management of food hygiene practices
Managing, training and mentoring any junior chefs
Monitoring portion and waste control highlight any concerns to the Head Chef
Support the Head Chef to ensure that the kitchen team comply with all health and safety, food safety and hygiene standards
Responsible for ensuring all kitchen equipment in your section is maintained and used in a safe and correct manner
Follow health and food safety hygiene procedures at all times
Great attention to detail
Excellent verbal and memory skills
Strong interpersonal and team work skills, including listening
Ability to remain composed, particularly during stressful or uncomfortable circumstances
Ability to maintain a positive attitude
Know when to raise a complaint to a more senior member of the team
