About the Role
We are seeking a passionate and driven Sous Chef to join the team at UBA, part of Hart Shoreditch. This is an exciting opportunity for a talented chef to play a key role in delivering a creative, high-quality pan-Asian dining experience while supporting the Head Chef in leading a dynamic and growing kitchen team.
As Sous Chef, youll be instrumental in day-to-day operations ensuring consistency, quality, and efficiency across all service periods. Youll support menu execution, lead by example on the pass, and mentor junior chefs, while maintaining the highest standards of food safety, profitability, and teamwork. Key Responsibilities
Kitchen Operations & Leadership
- Support the Head Chef in overseeing daily kitchen operations, ensuring smooth service and consistent delivery of exceptional food.
- Lead and inspire the BOH team during service, maintaining high energy, precision, and attention to detail.
- Supervise prep, cooking, and plating to ensure all dishes meet brand standards for quality and presentation.
- Uphold all health, safety, HACCP, and food hygiene regulations, ensuring full compliance at all times.
- Oversee daily cleaning routines, kitchen checklists, and maintenance schedules.
Menu Execution & Creativity
- Execute menu items to the highest standard, showcasing the restaurants pan-Asian concept and lifestyle-led ethos.
- Contribute ideas for menu development, seasonal specials, and creative activations in collaboration with the Head Chef.
- Ensure consistency in taste, portion control, and presentation across all sections.
- Champion ingredient utilisation and seasonal produce, supporting GP and sustainability goals.
Stock, Cost & Efficiency
- Assist in ordering, receiving, and storing stock with precision and accuracy.
- Help manage stock levels and minimise waste through effective rotation, prep, and cross-utilisation.
- Support in monitoring food costs, GP targets, and portion control to achieve profitability goals.
Team Development & Culture
- Train, coach, and mentor junior chefs, helping them develop skills and confidence in a high-performing kitchen.
- Foster a positive, inclusive, and collaborative team culture where creativity and accountability thrive.
- Support cross-functional collaboration between kitchen and front-of-house teams to ensure seamless service.
Brand Collaboration & Guest Experience
- Contribute to brand activations, special events, and creative F&B projects as part of the wider UBA and Hart Shoreditch vision.
- Be an ambassador for the restaurant embodying its energy, creativity, and guest-first approach.
Candidate Profile
- Proven experience as a Sous Chef or Junior Sous Chef in a high-end restaurant, boutique hotel, or lifestyle-led concept.
- Strong culinary skills with a keen eye for detail and commitment to delivering outstanding food.
- A collaborative leader with the ability to motivate, train, and inspire a diverse kitchen team.
- Sound understanding of kitchen operations, health & safety standards, and cost control principles.
- Creative, adaptable, and passionate about contemporary food culture and evolving dining trends.
