Founded in 2010, the company has quickly established itself as one of Londons best handmade afternoon tea providers.
Brigits is extremely proud of the service standards and quality of baking provided in its cozy Tea Salon in the heart of Covent Garden, on-board the hugely popular traditional red double decker Routemaster Afternoon Tea Bus Tours, the now famous Peppa Pig Afternoon Tea Bus Tours and on board our Thames River Cruise.
We are looking for an experiencedPastry Sous Chefto assist withAfternoon Tea preparation.Your skill in baking high quality treats should be matched by your creativity to develop new amazing tastes and recipes.
The ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. They must adhere to health and safety standards to provide clients with the best possible serving.
The goal is to enhance customer satisfaction so that we can maintain and expand our clientele.
Responsibilities
- Assisting with daily pastry production; this includes preparing ingredients, baking, decorating, and assembling pastries and desserts according to recipes and standards.
- Supervising the pastry section in the absence of the head pastry chef:
- Overseeing the workflow, ensuring smooth operations, and coordinating with other kitchen staff.
- Taking on additional responsibilities and ensuring that the pastry department runs smoothly.
- Maintaining high standards of food quality, safety, and hygiene.
- Ensuring compliance with food safety regulations and maintaining a clean and organized workspace.
- Supporting the head chef in menu development and contributing ideas for new pastries and desserts, and assisting with recipe testing and development.
- Inventory management, monitoring stock, ordering ingredients
- Training and supervising junior pastry staff, ensuring they are competent in their roles.
Requirements and skills
- Must have minimum of level 2 food safety training
- Proven experience as Pastry Sous Chef, baker or relevant role
- Able to work under pressure
- Great attention to detail and creativity
- Organizing and leadership skills
- Able to take direction and constructive criticism
- Willingness to replenish professional knowledge
- In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition
- Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
- Certificate in culinary arts, pastry-making, baking or relevant field
