Chef de Partie

Duties and responsibilities:

  • Participate in and supervise the preparation and cooking of all food on the given section in accordance with established recipe cards and methods.
  • Check daily function sheets, menus, event orders and forecasts to ensure appropriate production levels.
  • Ensure food is currently prepared to established standard by sampling on a regular basis.
  • Ensure all dishes are correctly garnished (where appropriate) before being sent to the outlets for service.
  • Conduct on-the-job training as appropriate.
  • Participate in menu planning as appropriate.
  • Coach and encourage employees in your section to adopt correct work methods.
  • Assist the Sous Chef in the completion of market lists in accordance with Hyatt quality and quantity standards.
