Kudu is the flagship restaurant of our collective. Established in 2017, Kudu is the South African/Modern European brainchild ofAmy Corbin and Patrick Williams. Awarded a Michelin Bib Gourmand in 2019, we pride ourselves on friendly, intimate service with a keen attention to quality and detail. Kudu Grill followed in 2021 with the same concept of cooking over open fire.

SUMMARY

A competent Chef de Partie must be creative and possess team work abilities when working with team members from varied backgrounds and experience levels. They must also possess strong organisational skills to ensure that everything operates well under pressure during peak hours. Restaurants are high pressure environments with intense work hours, so an ideal Chef must be resilient. They should also be quick thinking, self-driven, and motivated to be able handle the dynamic nature of kitchen activities.

You must also be available to work within stated operating hours, including weekends and public holidays. Furthermore, contributing to lower operational costs and deliver positive dining experiences for our guests.

Key Responsibilities:

  • Manage food service with an eye for quality and detail and delegate the mise-en-place.
  • Setting up the kitchen prior to a restaurants opening.
  • Preparing stations by organising food containers.
  • Cleaning and clearance of kitchen based on food safety and hygiene policies at end of shift.
  • Accurately labelling food products and items and storing them in line with food safety guidelines.
  • Comply with and enforce sanitation regulations and safety standards.
  • Attend and contribute to daily/weekly team meetings to boost staff morale.
  • Ensure a smooth flow of inventory and coordinate with team members.
  • Maintain a positive and professional approach with co-workers and customers.

YOU:

  • Must drive the Kudu culture, inspire, guide and educate team members.
  • Ensure a fully equipped team regarding compliance and is well knowledgeable about the menu and its ingredients.
  • Understanding of various cooking methods, ingredients, equipment and procedures.
  • Must have previous experience as a Chef within a busy restaurant environment.
  • Have a strong personality and the confidence to play an integral role in being part of a service and should reflect strong team work.
  • Consistently deliver excellent and an amazing experience for our guests.
  • Available to work evenings, weekends, and holidays.

Ideally an individual who is self-driven and ambitious. Passion for food and service is always necessary in hospitality, but the right candidate should reflect a positive attitude and strive for efficiency. A successful candidate should also have a thorough knowledge of and adherence to the law regarding the following company regulations:

  • Food Handling and Hygiene Regulations Level 2
  • Fire Regulations and Procedures
  • First Aid Procedures

We are merging and moving to Marylebone in Autumn 2025 and are looking for someone to come onboard in August. Must have the right to work.
