Follow instructions according to Ex Chefs directives
Keep a clean and tidy work station at all times
Full knowledge of menu and recipes
Brief all sections during menu changes
Run all services as required
Training of teams and organization of daily tasks for each section
Anticipate orders according to bookings and occupancy
Keep food cost aligned with budget communicated by Director of Finance
Assists Executive Chef with any tastings, menu changes
Communicates with floor staff regarding food stocks, allergens and any necessary kitchen activity
