The Role
Joining our main kitchen, you will be part of an innovative and passionate culinary team supporting all our dining outlets and event operations. As a Sous Chef, you will play a key role in supporting the senior kitchen leadership to deliver exceptional dining experiences that reflect the creativity, precision, and quality for which Hotel Café Royal is renowned.
You will be responsible for overseeing day-to-day kitchen operations, maintaining high standards of food preparation, and ensuring the smooth running of service across multiple outlets. This role represents an exciting opportunity for an ambitious and talented chef looking to progress their career within one of Londons most prestigious hotels.
Key Responsibilities
- Support the senior kitchen team in overseeing daily operations and service across all hotel outlets.
- Supervise and develop kitchen teams, ensuring consistency, quality, and excellence in every dish served.
- Assist in menu development, contributing creative ideas that align with the hotels luxury positioning.
- Maintain compliance with food safety, hygiene, and health & safety regulations.
- Control and monitor food costs, wastage, and portion sizes to achieve budgeted targets.
- Ensure stock levels and ordering systems are effectively managed.
- Lead by example, fostering a positive, professional, and collaborative working environment.
- Support and deputise for the senior chefs in their absence.
Your Profile
- Currently working as a Sous Chef or an experienced Junior Sous Chef ready for the next step.
- Proven experience in a large, multi-outlet 5-star hotel or high-end restaurant operation.
- Professionally trained with a minimum NVQ Level 3 qualification or equivalent.
- Experience in menu planning, team management, and kitchen operations.
- Strong understanding of budgeting, stock control, and food cost management.
- Creative, detail-oriented, and passionate about delivering exceptional cuisine.
- A strong team player with excellent leadership, communication, and organisational skills.
- Flexible and reliable, able to work 47 hours per week, including early mornings, late evenings, and weekends as required.
