Sous Chef - The Laundry Restaurant

The Laundry, a bustling, independent restaurant in Brixton (London), is looking for an ambitious and talented Sous Chef to join our busy kitchen. We are a high-volume, modern brasserie serving seasonally inspired European cuisine with a focus on quality, comfort, and exceptional service.

We need a strong second-in-command who can manage the day-to-day operations, lead our team, and maintain our high standards under pressure.

The Role

Reporting directly to the Head Chef, your primary responsibilities will include:

  • Kitchen Management: Overseeing all kitchen shifts, including prep, service, and closing procedures.

  • Team Leadership: Training, mentoring, and motivating junior kitchen staff. Stepping into the Head Chef role on days off and holidays.

  • Quality Control: Ensuring all dishes are executed to specification, consistently maintaining quality, presentation, and portion control.

  • Financial & Admin: Assisting with ordering, inventory, stock rotation, and managing kitchen costs (labour and food wastage).

  • Compliance: Upholding impeccable standards of hygiene and food safety (HACCP).

What We're Looking For

The ideal candidate will:

  • Have at least 2-3 years of experience as a Sous Chef or a strong Chef de Partie in a high-volume, quality restaurant.

  • Demonstrate genuine passion for seasonal produce and modern European cooking techniques.

  • Be a natural leader with excellent communication skills and the ability to remain calm and decisive during busy service periods.

  • Hold a relevant Food Hygiene certification.

  • Possess exceptional knife skills and efficiency across all kitchen sections.
