An opportunity has arisen for a Sous Chef to join one of Londons Mediterranean Restaurants - NOT hotel.
SousChef will serve as an assistant to the Head Chef. Their duties include leading the kitchen staff during the Head Chefs absence, guiding and supervising the junior kitchen staff during food preparation and assisting the Head Chef in menu preparation.

Ensuring all kitchen staff are trained to required level of
competence in food hygiene, HACCP and allergens
Due Diligences

-Cleaning Schedule
-Maintaining LIFO & FIFO
-Garbage Control
-Food Labelling and date/day tags
Oversee training and continued development of CDP's Commis and KP's
Efficiently plan & supervise food preparation
Calculated food cost requirements and wages to stay at par with budget.
Managing orderings on daily basis and monthly inventory
Manage all aspects of the kitchen including operational, quality and administrative functions
Manage the provision of food to Food and Beverage outlets and taking action where necessary to ensure compliance with current legislation
Assist in positive outcomes from guest queries in a timely and efficient manner
Ensure food stuffs are of a good quality and stored correctly
Contribute to menu creation by responding and incorporating Guest feedback
Manage customer relations, when necessary, in the absence of the Head Chef
Ensure resources support the business needs through the effective management of working rotations
Report maintenance, hygiene and hazard issues
