We are currently seeking a detail-oriented and proactive Food & Beverage Cost Controller to join our Finance team at the Royal Garden Hotel. This role is ideal for someone with strong analytical skills, excellent attention to detail, and a passion for maintaining financial accuracy within a dynamic hospitality environment.

The Food & Beverage Cost Controller will be responsible for overseeing all aspects of F&B cost control, inventory management, and reporting. Working closely with the Finance Manager, Purchasing, and F&B departments, the role ensures that all food and beverage transactions are accurately recorded, stock levels are properly maintained, and cost efficiencies are achieved in line with hotel policies and procedures.

TheFood & Beverage Cost Controllersmain responsibilities include:

  • Manage and maintain all food, beverage, and tobacco inventory systems, ensuring accurate recording of deliveries, transfers, and issues.
  • Conduct monthly stock takes across all F&B storage areas, investigate variances, and report findings to the Finance Manager or Financial Controller.
  • Ensure proper cost control by accurately recording requisitions, menu costings, and promotional event costings in the POS and stock systems.
  • Verify and reconcile supplier invoices and statements, ensuring timely authorisation and resolution of discrepancies.
  • Prepare financial reports, including monthly F&B accounting results, controllers reports, and weekly food flash reports, within company deadlines.
  • Support the F&B and Culinary teams with menu costing, recipe maintenance, yield testing, and profitability analysis.
  • Conduct regular spot checks in outlets to ensure adherence to standard recipes, portion controls, and beverage measures.
  • Assist with system management, including POS configuration, price updates, and staff training on inventory and POS systems.
  • Collaborate with Purchasing and F&B departments to monitor par levels, minimise wastage, and improve operational efficiency.
  • Participate in departmental meetings and stock counts, supporting Finance with ad-hoc analyses and compliance tasks as required.
