What you will do:

Immerse yourself in service from day one to understand the team, guests, and hospitality ethos
Observe, ask questions, and collaborate—your insights will help refine performance and guest experience
Support and complement the GM and owners, taking ownership of key initiatives and KPIs
Lead a small team (5–6) with empathy, calm, and a service-first mindset
Drive weekly sales, guest retention, and net spend per guest metrics
Champion a culture of learning, simplicity, and continuous improvement

Proven experience in restaurant management, including P&L responsibility
Strong operational skills: rotas, budgeting, health & safety, menu development
Deep knowledge of wine (WSET welcome), cocktails, and restaurant economics
