We are looking for an experienced Bars Manager reporting into the Head of F&B. Responsible for the management, training and organisation of the operations of several bars, and their teams to deliver exceptional service standards whilst continuing to develop beverage menus and managing beverage stock levels.
What you'll do?
As the Bars Manager, you will be responsible for the overall strategy, operations, and performance of all bar outlets within The Mandrake Hotel and CoOc Private Members Club. This role requires strategic thinking, leadership excellence, and a passion for mixology and luxury service. You will lead and inspire the bar teams, create innovative beverage offerings, and ensure that all operations align with our high standards and brand identity.
Key Responsibilities are inclusive of but not limited to:
- Oversee the operations and strategic direction of Waeska Bar, Jurema Terrace, Masha Hari Theatre, YOPO Bar, and the bars of CoOc Members Club.
- Develop and implement a comprehensive bar strategy to enhance guest experience, increase revenue, and maintain a competitive edge.
- Lead the creation and refinement of cocktail menus, emphasizing innovation, creativity, and premium quality.
- Manage and mentor bar teams, fostering a culture of excellence, teamwork, and continuous improvement.
- Ensure the preparation and presentation of beverages meet 5-star luxury standards across all outlets.
- Build and maintain relationships with premium suppliers to source high-quality ingredients, spirits, and products.
- Take full responsibility for inventory management, stock control, and cost optimization across all bars.
- Uphold and enforce strict health, safety, and hygiene standards.
- Monitor guest feedback and implement improvements to enhance satisfaction and loyalty.
- Manage bar-related budgeting, forecasting, and financial performance, including P&L analysis.
- Stay ahead of industry trends and ensure that the venues maintain their status as leaders in luxury mixology and bar service.
- Act as a brand ambassador for The Mandrake and CoOc, both internally and externally.
What you'll have?
- Minimum of 1 year management or 3 years Supervisory experience, following several years of bartending and mixology experience
- Excellent knowledge of wines, spirits, and mixed drinks classic and modern mixology
- Working experience within busy Luxury Club, Nightclub or Restaurant or any busy high end hospitality venue
- Excellent personal presentation and spoken English
- Be fun-loving, have a big personality and enjoy the culture that this industry offers
- Immaculate grooming standards
- Previous experience in a management role with experience gained from working in cocktail bars in high-end venues required
- Proven problem solving skills and creativity
