Restaurant Manager Role Summary
Haldirams is launching its flagship restaurant in Leicester Square, London. As Restaurant Manager, you will be responsible for leading all Front of House (FOH) and Back of House (BOH) operations to deliver the iconic Haldirams experience in one of the UKs busiest and most prestigious locations.
The role demands strong operational leadership, an exceptional focus on quality, and the ability to uphold Haldirams international SOPs, ensuring consistency with the brands global standards.

Restaurant Manager Key Responsibilities
Operational Leadership
- Oversee all daily FOH and BOH operations, ensuring smooth and efficient service in a high-volume environment.
- Uphold and enforce Haldirams brand-specific SOPs at all times, ensuring accurate execution by all team members.
- Ensure full compliance with UK food safety, hygiene and health & safety regulations, as well as Haldirams internal standards.
- Maintain outlet cleanliness, ambience and service quality to flagship-level expectations.
- Prepare staff rotas in line with business needs, footfall forecasts and labour budgets.
Financial & Commercial Performance
- Monitor daily sales, cost controls and overall profitability of the Leicester Square outlet.
- Prepare and manage budgets for sales, expenses and waste reduction.
- Achieve monthly revenue, profitability and operational KPIs set by the company.
- Analyse MIS reports and share performance updates with the Operations Head.
People Management
- Recruit, train and lead a high-performing team suited for an international flagship location.
- Deliver ongoing training on Haldirams menu, service techniques, product knowledge and SOP compliance.
- Conduct performance reviews and implement staff development plans.
- Foster a motivated, customer-focused, and collaborative work culture.
- Maintain discipline, punctuality and grooming standards across all teams.
Guest Experience & Brand Representation
- Ensure warm and professional guest service that reflects Haldirams hospitality values.
- Handle guest feedback, complaints and special requests with professionalism.
- Maintain strong relationships with guests, local partners and stakeholders in Leicester Square.
Operational Controls & Standards
- Conduct regular stock checks, supervise ordering and consumption, and ensure correct stock rotation (FIFO/FEFO).
- Coordinate closely with Haldirams central production kitchen and distribution teams.
- Maintain equipment in optimal condition; prepare a Preventive Maintenance Schedule with the maintenance department.
- Ensure accurate daily reporting, including sales, labour planning, wastage records, and incident reports.
Qualifications & Skills
- Bachelors degree in Hospitality Management or equivalent operational experience.
- 8 10 years of managerial experience in QSR/Casual Dining; UK or international brand experience preferred.
- Proven ability to lead teams in high-volume, fast-paced environments.
- Strong understanding of UK food safety, EHO standards, allergen laws and H&S regulations.
- Excellent communication, leadership and problem-solving skills.
- Ability to deliver results under pressure, maintaining superior guest service at all times.
