This is your chance to lead a busy rosette quality kitchen designing menus using locally sourced produce lots of fresh fish.

Our client, a beautiful boutique hotel in a stunning location, is looking for an experienced Head Chef (or a strong Sous Chef ready to step up) to join the team in Lyme Regis. You will be a passionate foodie and further develop the menu, drive sales, and deliver exceptional standards.

About the Role:

As Head Chef, youll take full responsibility for the daily running of the kitchen, ensuring consistent quality and smooth service across breakfast, lunch, dinner and afternoon tea.

Key responsibilities include:

Leading and motivating the kitchen team with a hands-on approach

Cooking and preparing your all-fresh daily menus

Managing GP, labour, wastage, and kitchen budgets

Monitoring stock levels, placing orders, and managing suppliers

Ensuring all food hygiene, health, and safety standards are met

Supporting and developing team members through training and mentoring

Planning staff rotas and holidays to meet business needs

Were Looking For:

An experienced Head Chef or strong Sous Chef with a background in fresh food rosette rated kitchens

Excellent communication and leadership skills

A calm, supportive mentor who enjoys developing others

Commercially minded with good understanding of GP, costs, and labour

Well-versed in Food Hygiene and Health & Safety practices

Friendly, approachable, and passionate about creating delicious, seasonal dishes

A positive, team-focused attitude and a genuine love for cooking
