Seating arrangements are versatile to accommodate various events, including:
Open-air tables and benches for casual gatherings
A newly constructed covered seating area (12m x 6m) for long-table dining events
A flower field setting with a stretch tent (10m x 8.5m) for an immersive dining experience
An optional 6m yurt for intimate private dining or workshops
The vision is to create a **brunch-style menu** that highlights traditional techniques such as salting, curing, pickling, fermenting, fire cooking, and smoking. Over time, the goal is to expand into workshops on these techniques and develop products for sale through our Farm shop and external retail channels. However, to establish the service for this Summer season, the menu may be simplified to feature savoury and sweet crpes, scoop ice cream, and high-quality hot/cold drinks.
The chef will be able to develop a menus using the onsite market garden, own farm eggs, hogget, lamb, and pork, nearby foraging areas (including the sea), and other local providers such as fisherfolk and growers in the Mearns.
Key ResponsibilitiesThe chef will play a pivotal role in the success of The Field Kitchen, focusing on:
**Menu Development and Execution**: Craft a creative and seasonal menu using classic preparation techniques and locally sourced ingredients.
**Operational Certification**: Ensure certification for food operations and compliance with Environmental Health standards, including completing the Food Management System.
**Licensing**: Apply for and maintain a street traders licence (the business already holds a licence for the Airstream) and alcohol licence when events require it
**Workshop and Product Development**: Develop and deliver workshops on food preparation techniques and create value-added products for sale in the on-site shop and beyond (optional).
**Event Support**: Assist with event planning, hosting, and delivering exceptional customer experiences during dining events and private bookings.
Qualifications and SkillsTo thrive in this role, the ideal candidate will have:
Certification to operate as a chef in a professional capacity
A passion for exciting seasonal dining of high quality and beautiful presentation, whilst remaining appealing to a broad audience
.Of friendly, polite, and positive minded disposition, good with public and working as a team member with other folks on the farm and in the Field Kitchen
Understanding of pricing and wise use of food in reducing waste and in adding value
Good communication skills with a passion for great food and the stories behind it
Strong culinary skills and experience in food preparation techniques like curing, pickling, fermenting, and fire cooking
Knowledge of food safety and compliance with environmental and health regulations
Experience in event catering or a love for working in dynamic, creative environments

**Facility Expansion**: Pending permissions, Sillyflatt aims to convert an old mill on the farm into a banquet-style hall for hire, pop-up restaurants, and events, offering flexible year-round opportunities for chefs to "opt-in" as desired.

Additional InformationThe Airstream has planning permission, and the site is in the process of obtaining a street traders licence. This licence will allow the Airstream to operate both on and off the farm, adding flexibility and mobility to the role.
