The Wollaton Pub & Kitchen is a friendly, high-quality gastropub combining home-from-home atmosphere with a good dining experience.
We serve breakfast, lunch, brunch, la carte dinner and hearty Sunday lunches.
As Sous Chef, you will support the Head Chef to deliver high-quality, flavourful dishes and maintain the smooth operation of our kitchen. Youll be second-in-command, managing the kitchen during service, supervising the team, and contributing to menu development.
Key ResponsibilitiesOversee kitchen operations alongside the Head Chef, ensuring high standards of food preparation, presentation and hygiene.
Lead the kitchen during service: coordinate lines, ensure timing, quality and consistency.
Supervise, train and motivate kitchen brigade (chefs de partie, commis, pantry, etc.).
Assist in menu planning, costing, ordering and stock control.
Maintain and monitor food safety, cleanliness, and HACCP compliance.
Contribute to seasonal menu updates and daily specials that reflect our ethos of quality and seasonal produce.
Cover the Head Chef as required (e.g., holidays, absence).
Maintain budgetary discipline, minimize waste and optimize efficiency.
Proven experience in a Sous Chef or similar role within a busy kitchen (ideally pub/restaurant/gastropub).
Excellent leadership and communication skills with the ability to motivate a team.
Strong knowledge of food safety, hygiene and kitchen operations.
Creativity and passion for quality cuisine, seasonal produce and excellent presentation.
Ability to work under pressure, multi-task and maintain high standards in a fast-paced environment.
Flexible approach to work, including evenings, weekends and public holidays.
Good organisational and time-management skills.
