About Us

The Wollaton Pub & Kitchen is a friendly, high-quality gastropub combining home-from-home atmosphere with a good dining experience.
We serve breakfast, lunch, brunch, la carte dinner and hearty Sunday lunches.

Role Purpose

As Sous Chef, you will support the Head Chef to deliver high-quality, flavourful dishes and maintain the smooth operation of our kitchen. Youll be second-in-command, managing the kitchen during service, supervising the team, and contributing to menu development.

Key Responsibilities
  • Oversee kitchen operations alongside the Head Chef, ensuring high standards of food preparation, presentation and hygiene.

  • Lead the kitchen during service: coordinate lines, ensure timing, quality and consistency.

  • Supervise, train and motivate kitchen brigade (chefs de partie, commis, pantry, etc.).

  • Assist in menu planning, costing, ordering and stock control.

  • Maintain and monitor food safety, cleanliness, and HACCP compliance.

  • Contribute to seasonal menu updates and daily specials that reflect our ethos of quality and seasonal produce.

  • Cover the Head Chef as required (e.g., holidays, absence).

  • Maintain budgetary discipline, minimize waste and optimize efficiency.

Person Specification
  • Proven experience in a Sous Chef or similar role within a busy kitchen (ideally pub/restaurant/gastropub).

  • Excellent leadership and communication skills with the ability to motivate a team.

  • Strong knowledge of food safety, hygiene and kitchen operations.

  • Creativity and passion for quality cuisine, seasonal produce and excellent presentation.

  • Ability to work under pressure, multi-task and maintain high standards in a fast-paced environment.

  • Flexible approach to work, including evenings, weekends and public holidays.

  • Good organisational and time-management skills.
