ROSETTE EXPERIENCE IDEAL SO IS PASTRY EXPERIENCE

Its not often that vacancies come up in this small, stable kitchen team, but a new opportunity has arisen. This role offers an ambitious and enthusiastic chef the chance to step into a key position and take on real responsibility in a supportive environment.

This role would ideally suit a capable Chef de Partie looking to progress into their first Sous Chef position. As part of a close-knit team, youll gain experience running the pass two days a week, while also benefitting from training and support to develop your skills further.

What We Do
  • 18-bedroom boutique hotel with a high-end restaurant.

  • Consistently ranked among the best in Scotland.

  • Evening service only (no lunches), serving up to 36 covers per night.

  • Cuisine: modern Scottish with classical influence, operating at two AA rosette standard.

  • Daily changing 4/4/4 menu to keep things fresh and exciting.

  • All food made in-house, including stocks, breads, and ice creams.

  • 3-chef kitchen, with 2 chefs on each evening service.

  • 36 a la carte breakfasts served daily.

The Role
  • Sous Chef position in a classic small kitchen team.

  • Working up to 48 hours per week over 5 days. Two consecutive days/nights off.

  • Afternoon prep and evening service (finishing around 10pm).

  • Stand in for the Head Chef two days per week, overseeing menu planning, prep, and running the pass.

  • 2 breakfast shifts per week.

  • Broad responsibilities including menu input, ordering, organisation, prep, and service.

  • No kitchen porter chefs wash their own pans.

Package
  • Equal share of tips, distributed monthly.

  • Holidays largely taken out of season.

  • Single bedroom in shared staff accommodation may be available (£60 per week, bills included).

Candidate Profile
  • Ideal for a strong Chef de Partie ready to step into a Sous Chef role.

  • Previous rosette-standard experience is important.

  • Passionate, ambitious, and eager to learn with a calm and positive attitude.

  • Strong attention to detail and high standards no cutting corners.

  • Professional appearance, excellent hygiene, and a tidy, organised approach.

  • References required.
