About the Role:

We are seeking a passionate and experienced Sous Chef to join our culinary team at a prestigious hotel in Sutton Coldfield, renowned for its high-end la carte dining. Working alongside our Head Chef, youll play a key role in delivering exceptional dishes with precision, creativity, and consistency, maintaining the high standards expected in a fine dining environment.

This is an exciting opportunity for a driven individual to bring their expertise, leadership, and flair to a refined kitchen that values quality, seasonality, and innovation.

Key Responsibilities:
  • Support the Head Chef in daily kitchen operations, including service and prep

  • Lead and motivate the kitchen team, ensuring high standards of food quality, hygiene, and presentation

  • Oversee mise en place, stock control, ordering, and waste management

  • Contribute to menu planning and development of new dishes with a focus on seasonality and innovation

  • Maintain compliance with all food safety, hygiene, and health & safety regulations

  • Train and mentor junior chefs, fostering a positive and professional kitchen culture

  • Ensure smooth, efficient service during busy la carte dinner service

Requirements:
  • Proven experience as a Sous Chef or strong Junior Sous in a fine dining or luxury hotel environment

  • Exceptional culinary skills with a passion for modern British or European cuisine

  • Strong understanding of kitchen operations, food costing, and allergen awareness

  • Leadership and communication skills to manage and inspire a kitchen brigade

  • Ability to work under pressure while maintaining high standards

  • Food Hygiene Level 2 (minimum) Level 3 preferred

Desirable:
  • Formal culinary qualifications (e.g. NVQ Level 2/3 or equivalent)

  • Experience with seasonal or locally sourced produce

  • Knowledge of wine and food pairings
