What We’re Looking For:

As a Lead Pastry Cook, you will be responsible for overseeing the daily production and execution of all pastry and dessert items. This hands-on leadership role involves managing a team of pastry cooks, ensuring consistent product quality, and maintaining high standards of cleanliness and organization. You will work closely with the Pastry Chef or Executive Chef to support menu development, coordinate production schedules, and train junior staff. This position is ideal for a technically skilled and highly organized pastry professional with a passion for creativity and precision.

What You Will Do:

  • Oversee daily pastry production and ensure quality, consistency, and presentation standards are met.

  • Lead and mentor a team of pastry cooks and assistants, delegating tasks and providing training and guidance.

  • Prepare a variety of baked goods, desserts, and confections including cakes, tarts, mousses, laminated doughs, custards, and more.

  • Manage mise en place, production timelines, and inventory for the pastry department.

  • Collaborate with the Pastry Chef or Executive Chef on seasonal menus, recipe development, and special event offerings.

  • Ensure proper storage, labeling, and rotation of all ingredients and finished products.

  • Maintain a clean, organized work area and ensure all food safety and sanitation standards are followed.

  • Troubleshoot issues, adapt to changing production needs, and support service with plated dessert execution if applicable.

  • Regular attendance in conformance with standards.

  • May be required to work varying schedules to reflect business needs.

  • Required to attend all mandatory training sessions and meetings.

  • Perform other duties as assigned.

Your Qualifications Include:

Required

  • 3–5+ years of professional pastry experience, including experience in a leadership or supervisory role.

  • Advanced skills in pastry fundamentals, including doughs, fillings, tempering chocolate, and plated dessert techniques.

  • Familiarity with commercial pastry and baking equipment (e.g., convection ovens, mixers, sheeters, blast chillers).

  • Proven ability to lead a team in a fast-paced kitchen or bakery setting.

  • Strong time management, communication, and organizational skills.

Preferred

  • Familiarity with food safety and sanitation standards or certification.
