The sports and entertainment portfolio at COTA is unmatched in the country with Formula 1 US Grand Prix, NASCAR, and MotoGP attracting global fans during championship races on the famed Circuit and LiveNation producing over 30 headline concerts every year at the Germania Insurance Amphitheater. We are seeking a seasoned, motivated, and innovative leader to join our growing Circuit of the Americas team as the Executive Sous Chef. In this position, you will assist in leading all culinary aspects of events including prior planning, cost management, kitchen staffing, onsite execution, logistics, equipment needs, postproduction check lists, clean up, and budget work. Responsibilities: Be a leader on the culinary team at a variety of events. This position will mainly focus on golf tournaments but will lead and support other venues such as boat shows, collegiate stadiums, concerts, racetracks, and more. Develop, implement, and communicate creative menu items that adhere to the Proof of the Pudding standard Creating or updating Production sheets, order building, distribution sheets, scheduling, production schedules Execution of events and food service while maintaining the highest level of food quality and presentation Assist the Executive Chef with management of financial goals and food cost of multiple coinciding events while maintaining and tracking the culinary budget Capable of producing a consistent product in high volume for multiple service times per day Ensure proper safety and sanitation of all kitchen/food service areas Create and maintain the overall moral of the kitchen and culinary team Schedule staff and food production in accordance with the demands of business by working closely with the staffing and sales departments to ensure communication and budgets are kept Oversee logistical planning and execution of events including communicating equipment needs and kitchen layouts Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures Lead satellite kitchens including hourly staff, food execution timeline, and daily prep work. Performs other related duties as needed.QualificationsRequired Qualifications: Minimum 5 years of experience in a bulk production kitchen or high-volume culinary environment Multi-unit operational experience is mandatory (stadiums, arenas, convention centers, casinos, resorts, large commissaries, race tracks, or similar venues) Demonstrated experience leading large culinary teams during peak service Strong background in banquet, buffet, concessions, and event-based service Proven ability to execute menus at scale while maintaining quality and food safety standards Specialized Qualifications: Excellent listening and communication skills Proven time management and delegation abilities Exhibit cooking skills, knowledge, and food handling skills consistent with contemporary training and have the desire to learn more Work Environment This position breakdown will include both in-office work and kitchen responsibilities. Office work involves computer usage, inter-departmental meetings, and communications via email, phone, and in person. Kitchen duties can include using standard kitchen equipment, bending, lifting, pushing, carrying, and moving products, food items, and equipment. Job duties may include movement between indoors, outdoors, and structures throughout the property. Physical Demands: Prolonged periods of sitting at a desk and working on a computer. Periods of standing, moving through an event space, and traveling from venue to venue with bending, lifting, scooping, and carrying miscellaneous equipment and food items Ability to perform physical tasks; such as but not limited to, lifting approx. 25 lbs.
