Job Description Summary:

Summary:
As a Lead Baker, you are a crucial member of the culinary team, responsible for planning, preparing, and decorating all baked goods with precision and creativity. You lead by example, maintaining the highest standards of cleanliness and sanitation across all work areas and equipment. In this role, you provide guidance to bakery staff on daily assignments and special projects, ensuring consistency, efficiency, and quality in every task.

 

 

Job Description:

Essential Functions and Responsibilities

  • Assist with training and serve as a resource to team members to support performance, engagement, and adherence to company standards
  • Support daily operations by monitoring work areas, guest interactions, and service flow for quality, efficiency, and safety
  • Serve as a shift lead and escalation point for resolving basic team member or guest concerns, referring complex issues to management as needed
  • Produce breads and pastries daily, aligning production to demand without overproduction
  • Actively contribute to the development and refinement of new recipes
  • Maintain cleanliness, organization, and sanitation in the bakery, including walk-ins, freezers, and prep areas
  • Ensure all baking areas are stocked with proper and adequate supplies for the next day at the end of each shift
  • Complete department inventory monthly
  • Monitor and support food cost control efforts
  • Direct and delegate tasks to Bakery staff during special projects and in the absence of the Pastry Chef
  • Inform the Pastry Chef of departmental concerns and offer practical solutions
  • Consistently adhere to all Clark County Health District regulations and food safety standards
  • Ensure compliance with all applicable gaming laws and company internal controls, policies and procedures, Title 31, and federal regulations, if they apply to the position
  • Provide outstanding guest service in a timely manner to both guests and fellow team members that meets the company's guest service culture standards
  • Perform other duties as assigned

Qualifications

  • 3 years of professional baker experience with previous experience in a leadership role preferred
  • Experience developing and testing recipes preferred
  • Prior bakery or pastry experience in a gaming or hospitality environment is a plus
  • Knowledge of cost containment and inventory control procedures
  • Demonstrated ability to guide and motivate peers in a high-volume or guest-facing environment
  • Strong verbal communication and interpersonal skills to deliver coaching, relay expectations, and assist in conflict resolution
  • Reliable and organized with the ability to prioritize tasks and support shift coordination
  • Flexible to adapt to changing business needs, schedules, and guest volumes
  • Committed to fostering a respectful, inclusive, and safety-conscious work environment
  • Ability to access and input information using a moderately complex computer system
  • Skilled in Microsoft Office Suite, including Outlook, Excel, and Word; familiarity with collaboration tools like Microsoft Teams

Requirements

  • At least 21 years of age
  • High School Diploma or equivalent required; baking degree or certification preferred
  • Ability to effectively communicate in English, both written and verbal
  • Obtain and maintain all work cards as required by the company
  • Verify right to work in the United States
