Overnight BakerÂ
Sharbert Enterprises is seeking a skilled and dependable Overnight Baker to support commissary production under the direction of our Lead Baker. This is not an entry-level role—it is designed for an experienced baking professional with demonstrated leadership or assistant head baker experience.
Working overnight in our BZN Airport commissary kitchen, this role plays a critical part in delivering high-quality baked goods that support multiple airport concepts. The products you create overnight are experienced by thousands of travelers each day and help set the quality standard across our cafés and restaurants.

Schedule & Status
- Hours: 12:00 AM – 8:00 AM (flexible within production needs)Â
- Status: Full-Time or Part-TimeÂ
- Availability Required: Must be able to work a flexible schedule, including weekends and some holidaysÂ
Key Responsibilities
- Produce consistent, high-quality baked goods, including breads, pastries, muffins, cookies, and specialty itemsÂ
- Execute recipes with precision while maintaining excellent flavor, texture, and presentation standardsÂ
- Support and uphold production standards set by the Lead BakerÂ
- Ensure production timelines are met to support early morning airport operationsÂ
Leadership Support & Oversight
- Assist the Lead Baker in maintaining workflow, organization, and production efficiencyÂ
- Help guide and support team members during overnight production when neededÂ
- Reinforce standards, consistency, and accountability within the commissary environmentÂ
Presentation & Craftsmanship
- Maintain strong visual presentation standards appropriate for airport retail environmentsÂ
- Apply finishing techniques that reflect pride in craftsmanship and attention to detailÂ
- Contribute ideas for product improvements and seasonal offerings while maintaining scalabilityÂ
Cost Control & Efficiency
- Execute production with strong awareness of yield, waste reduction, and ingredient utilizationÂ
- Follow portion control and standardized recipes to support food cost targetsÂ
- Maintain organized storage and product handling practicesÂ
Food Safety & Professional Standards
- Adhere to all food safety, sanitation, and HACCP guidelinesÂ
- Maintain a clean, organized, and professional workstationÂ
- Follow Sharbert Enterprises’ operational standards and safety expectationsÂ
Qualifications
- Minimum 2 years of baking experience, preferably in a production or leadership-support roleÂ
- Strong ability to follow established recipes and execute with consistency and quality presentationÂ
- Comfortable working independently during overnight hours with minimal supervisionÂ
- Reliable, punctual, and able to manage time effectively in a production environmentÂ
- Basic understanding of kitchen organization, cleanliness, and food safety standardsÂ
Career Interest:
Experienced baker or pastry professional seeking an overnight baking position in a high-volume commissary kitchen. Strong interest in baking, pastries, breads, desserts, muffins, cookies, and scratch-made baked goods. Background in bakery production, food service, restaurant kitchens, or coffee shop bakery environments. Skilled in following recipes, consistent product execution, food presentation, and early morning production schedules.
