Job Description:

POSITION SUMMARY

The Assistant Manager – Food & Beverage is responsible for supporting the efficient, profitable operation of front‑of‑the‑house food service outlets. This position assists in planning, directing, and supervising daily Food & Beverage operations while ensuring exceptional guest service, regulatory compliance, and alignment with organizational objectives.

ESSENTIAL FUNCTIONS

The essential functions listed below are required tasks of this position. The employee must be able to perform these essential functions, with or without reasonable accommodation.

  • Support daily operations of front‑of‑the‑house food service outlets to ensure efficiency, profitability, and service excellence.
  • Foster a guest‑focused environment that promotes repeat visitation and positive guest relations.
  • Hire, train, coach, schedule, evaluate, and supervise front‑of‑the‑house team members.
  • Maintain staff morale through effective leadership, communication, and training.
  • Assist with budgeting, labor controls, and inventory management to meet financial objectives.
  • Monitor guest satisfaction, service levels, and operational performance; implement improvements as needed.
  • Collaborate with the Director of Food & Beverage to analyze food costs, forecast business trends, and recommend menu pricing or promotional adjustments.
  • Ensure compliance with all federal, state, and local regulations, including gaming, health, and safety requirements.
  • Conduct routine inspections of front‑of‑the‑house areas to ensure cleanliness, safety, and asset protection.
  • Investigate, resolve, and document guest complaints and service recovery efforts.
  • Coordinate with the Culinary, Marketing, and Player Development teams for special events and promotions.
  • Assist with operations across all Food & Beverage outlets as business needs require.
  • Perform other duties as assigned.

NON‑ESSENTIAL FUNCTIONS

  • Attend training sessions, seminars, or meetings as required.

MINIMUM QUALIFICATIONS

Education and Experience (may be substituted on a year‑for‑year basis)

  • High school diploma or equivalent with six (6) years of restaurant experience, including at least two (2) years in a supervisory role; or
  • Bachelor’s degree in Restaurant Management, Business Administration, or a related field with three (3) years of restaurant experience, including one (1) year in a supervisory role.

REQUIREMENTS

  • Must obtain and maintain all required licenses and certifications per federal, state, and gaming regulations.
  • Must successfully pass a background check and drug screening.
  • Must be at least twenty‑one (21) years of age.
  • Experience opening new properties or outlets is strongly preferred.

KNOWLEDGE, SKILLS, AND ABILITIES

  • Knowledge of food and beverage operations in high‑volume environments.
  • Understanding of food safety, sanitation, and health regulations.
  • Strong leadership, communication, and organizational skills.
  • Ability to manage labor, budgets, and inventory.
  • Proficiency with POS systems and basic computer applications.
  • Ability to work flexible schedules, including evenings, weekends, and holidays.

Physical Demands

  • This position requires extended periods of standing, walking, bending, and moving throughout food and beverage service areas.
  • The employee must regularly communicate verbally with guests, team members, and management.
  • Frequent use of hands and arms is required for handling equipment, operating POS systems, and completing administrative tasks.
  • The employee may occasionally be required to lift, push, pull, or carry items weighing up to approximately thirty (50) pounds, such as supplies or equipment.
  • Specific vision abilities required include close vision, distance vision, and the ability to adjust focus.
  • The employee must be able to tolerate a fast‑paced, high‑volume environment with frequent interruptions.

Work Environment:

  • The work environment is primarily indoors within restaurant, bar, and casino settings.
  • The employee may be exposed to varying noise levels, crowd density, temperature changes, kitchen equipment, cleaning chemicals, and food service machinery typical of a food and beverage operation.
  • The employee may be exposed to varying noise levels, bright or low lighting, crowd density, temperature fluctuations, and continuous guest activity typical of a casino gaming floor.
  • Exposure to food service equipment, kitchen machinery, cleaning chemicals, and other materials common to Food & Beverage operations may occur.
  • Work areas permit smoking, in accordance with state and local gaming regulations.
  • The position operates within a highly regulated gaming environment and requires adherence to all applicable gaming laws, internal controls, security protocols, and surveillance standards.
  • Work schedules may include evenings, overnight shifts, weekends, holidays, and special events based on business demand.
  • Access to restricted areas may require valid gaming credentials, licensing, or permits, and employees may be subject to continuous video monitoring while on the premises.
