Position Overview

The Cook at Hickory plays a vital role in executing Chef Travis Milton’s Appalachian-inspired cuisine with precision and consistency. This position is responsible for preparing and cooking high-quality dishes, maintaining organized workstations, and ensuring food safety standards are met. With 2–3 years of professional kitchen experience, the Cook supports the restaurant’s commitment to excellence, contributing to memorable dining experiences for every guest.

Key Responsibilities

  • Prepare and cook menu items according to Hickory’s recipes, portion standards, and presentation guidelines.
  • Set up and stock stations with necessary ingredients, tools, and equipment prior to each service.
  • Execute dishes efficiently and consistently during service, maintaining accuracy, timing, and quality under pressure.
  • Monitor temperatures, cooking times, and portion sizes to ensure consistency and compliance with culinary standards.
  • Follow all food safety, sanitation, and hygiene protocols in accordance with local health regulations and company policy.
  • Maintain a clean, organized, and well-stocked workstation throughout each shift.
  • Assist with product receiving, rotation, and storage to preserve freshness and reduce waste.
  • Properly operate, clean, and maintain kitchen equipment and utensils.
  • Communicate and collaborate effectively with chefs, fellow cooks, and front-of-house staff to ensure smooth service flow.
  • Support menu development, special events, and seasonal offerings as directed by the culinary leadership team.
  • Contribute to a positive, respectful, and team-oriented kitchen culture that reflects Hickory’s commitment to excellence and hospitality.

Qualifications

Required:

  • Education: High school diploma or equivalent preferred.
  • Experience: 2–3 years of experience as a cook or line cook in a high-volume or fine dining restaurant.
  • Solid culinary knowledge, strong knife skills, and ability to execute consistent cooking techniques.

Preferred:

  • Formal culinary training or certification.
  • Experience in fine dining, farm-to-table, or luxury hospitality settings.

Knowledge, Skills, and Abilities (KSAs)

  • Knowledge of cooking methods, ingredients, and equipment.
  • Ability to multitask and stay composed in a fast-paced kitchen.
  • Strong teamwork and communication skills.
  • Attention to detail with a commitment to quality and consistency.
  • Flexibility to adapt to menu changes and evolving service needs.

Work Environment / Physical Requirements

  • Professional kitchen environment with exposure to heat, steam, and sharp equipment.
  • Requires standing for long periods, bending, lifting, and repetitive motions.
  • Must be able to lift up to 40 lbs (supplies, food products, or equipment).
  • Flexible schedule, including evenings, weekends, and holidays.
