GENERAL STATEMENT OF DUTIES: On an assigned shift, to be responsible for planning and supervising the preparation and cooking of all food and the preparation and making of beverages in a kitchen providing meals daily to less than 100 persons; or to serve as an assistant to a cook of higher rank in a larger kitchen; and to do related work as required.
SUPERVISION RECEIVED: When serving as the cook in charge of a small kitchen, works under the administrative supervision of a superior; or, works under the general supervision of a cook of higher rank when working in a larger kitchen.
SUPERVISION EXERCISED: As required, plans, supervises and reviews the work of cook's helpers or others engaged in food preparation and cooking activities.
ILLUSTRATIVE EXAMPLES OF WORK PERFORMED:
On an assigned shift, to be responsible for planning and supervising the preparation and cooking of all food and the preparation and making of beverages in a kitchen providing meals daily to less than 100 persons.
To estimate food needs in advance and to requisition kinds and amount of food necessary to comply with menu requirements.
To supervise the receipt, storage, care and distribution of food supplies.
To be responsible for the preparation of meals, adhering to approved standardized recipes and predetermined time schedule.
To instruct and train subordinates in the proper preparation and cooking of food.
To be responsible for maintaining the kitchen, storage rooms and related areas in a clean condition and free from pests and rodents.
To serve as an assistant to a cook of higher rank in a larger kitchen by preparing and cooking foods as directed.
To do related work as required.
REQUIRED QUALIFICATIONS FOR APPOINTMENT:
KNOWLEDGES, SKILLS AND CAPACITIES: A working knowledge of food and beverage preparation; a familiarity with kitchen management; skill in the various branches of cookery involved in the preparation of meats, fish, vegetables, soups, salads, beverages and desserts in large quantities; and related capacities and abilities.
EDUCATION AND EXPERIENCE:
Education: Such as may have been gained through: completion of eight school grades; and
Experience: Such as may have been gained through: employment as a cook at the journeyman level engaged in the preparation of foods of all kinds in large quantities in a hospital, hotel or restaurant.
Or, any combination of education and experience that shall be substantially equivalent to the above education and experience.
SPECIAL REQUIREMENT: At the time of appointment must be physically qualified to perform assigned duties as evidenced by a physician's certificate.
Supplemental Information
Supplemental Duties: To provide for the supervision of youth assigned to specific duties within the kitchen as it relates to the rehabilitative process; to conduct and assist in searches of youth when directed; to assist with washing, peeling, chopping, dicing, or grinding vegetables, fruits, and other foods for cooking or for salads; to do other simple work in food preparation such as making toast, coffee, tea, chocolate, preparing cereal, cooking eggs, making sandwiches, stirring soups, or boiling potatoes or other vegetables; to prepare patient intravenous feeding by measuring and assembling specified ingredients using graduated devices; to assemble diet trays and as instructed arrange food thereon to be served to patients; to load food onto food trucks or place food in receptacles in steam tables; to set up dining tables for service; as required, to serve food to persons in the cafeteria from steam tables; to collect trays, soiled dishes, cutlery, glassware, etc., after meals and to dispose of scrap or leftover foods; to restock and maintain order of limited amounts (week's supply) of store goods; to wash dishes manually or in an automatic dishwashing machine and to wash cutlery and glassware and to put them in their designated places for reuse; to clean and wash food trucks, dishwashing machines, freezers, walk-in refrigerators, and other kitchen equipment and utensils; to clean and wash down the food preparation areas, kitchen cafeteria, and related dining areas including floors, walls, immovable equipment, and portable food service equipment; to assist with performing such bakery duties as assembling materials and weighing, measuring, and as instructed mixing ingredients by hand or in an electric powered mixing machine, rolling dough, filling pans with dough or batter, placing goods to be baked in and removing them from ovens, performing tasks such as carrying materials to a baker or to machines, depositing ingredients in containers, greasing pans, lining pans with greased paper or other appropriate lining, and moving racks or rack trucks of dough and/or batter or baked goods to and from ovens; to assist with assembling, portioning, packaging, and transporting of materials, operating a pan and rack washing machine, washing pots and pans, and cleaning work areas and refrigerators; and to do related work as required.Supplemental Requirements: Must be able to complete Division-provided training and certification in the following areas: supervision of adjudicated youth, facility key control, facility security procedures, emergency response codes, proper portable radio utilization, PREA (Prison Rape Elimination Act) standards and compliance, search procedures, fire safety, First Aid and CPR/AED, and Safe Crisis Management / Physical Restraint.
