Unit Description
Delaware North operates Mardi Gras Casino and Resort dating back to 2018. Located 14 miles west of Charleston, West Virginia, Mardi Gras features more than 25 table games, a poker room, more than 850 slot machines, live greyhound racing, and off-track betting for both greyhound and horse racing; several restaurants and a 150-room hotel.
Responsibilities
- Demonstrate expertise in multiple cooking techniques and prepare high-quality menu items with consistency, precision, and attention to detail
- Manage assigned stations independently by maintaining organization, cleanliness, proper mise en place, and service readiness throughout each shift
- Prepare proteins, vegetables, sauces, stocks, starches, garnishes, and other ingredients required for daily service execution
- Utilize proper knife skills, fabrication methods, portioning techniques, and ingredient handling practices to maximize yield and minimize waste
- Ensure food quality, temperature, presentation, and portion standards are maintained during both routine and high-volume service periods
- Operate and maintain commercial kitchen equipment safely while adhering to food safety, sanitation, allergen, and health code requirements
- Support inventory management through receiving, labeling, dating, rotation, storage, and FIFO procedures while contributing to food cost control efforts
- Collaborate with culinary team members, assist in training less experienced employees, and proactively communicate operational challenges, equipment concerns, or product quality issues to leadership
Qualifications
- Minimum of 1 year of related experience
- Ability to read and comprehend prep sheets and recipes
- Basic math skills, with the ability to calculate and follow recipe measurements
- Strong understanding of kitchen fundamentals, food safety, mise en place, recipe execution, portion control, professional kitchen organization, and proper equipment use
- Experience in high-volume restaurants, hotels, resorts, casinos, banquets, or upscale dining environments is strongly preferred
- No high school diploma or GED required
Physical Requirements
- Ability to lift up to 50 pounds
- Standing and walking for the entire length of shift
