Job Title: Lead Baker
         Location: Lofty Roasting Works, Encinitas

Reports To: Culinary Director
Job Summary
As a Lead Baker at LOFTY, you will be responsible for executing our signature recipes and upholding the highest standards in quality, consistency, and presentation. This role requires a passion for artisanal baking, strong organizational skills, and the ability to work efficiently in a fast-paced, team-oriented environment.
Key Responsibilities
- Prepare and execute LOFTY’s proprietary recipes for breads, pastries, and other baked goods with precision and care.
- Establish and maintain appropriate PAR levels for production items to meet daily and weekly business demands.
- Operate and maintain baking equipment, including mixers, ovens, blenders, and heat sources, ensuring safety and efficiency at all times.
- Uphold LOFTY’s standards for food quality, consistency, and food safety.
- Ensure all baked goods are ready and fully stocked in the pastry case by opening time each day.
- Maintain strict adherence to sanitation, allergen control, and food safety guidelines during all phases of production.
- Restock and sanitize workstations throughout and at the end of each shift, ensuring cleanliness and readiness for the next team.
- Conduct daily cleaning of equipment, baking pans, tools, and work surfaces.
- Follow FIFO (First In, First Out) procedures to rotate and stock inventory from vendors.
- Communicate effectively and professionally with the café and leadership teams.
Requirements
Qualifications
- Valid Food Handler’s Certificate required.
- Degree from an accredited culinary school or equivalent professional baking experience preferred.
- Demonstrated experience in a professional kitchen or bakery setting.
- Flexible availability, including weekends and holidays.
- Exceptional attention to detail, especially when inspecting ingredients and final products.
- Ability to work both independently and collaboratively in a team-focused environment.
- Strong problem-solving skills and a proactive approach to scheduling and production challenges.
- Physically able to stand for extended periods, bend, lift heavy items (up to 100 lbs.), and work in a high-temperature kitchen environment.
- Dependable, punctual, and consistently reliable in attendance and performance.
