Job DetailsJob Location: Fort Collins, CO 80524Salary Range: $17.00 - $19.00 Hourly Located in an historic 100-year-old grain mill, Ginger and Baker is home to two restaurants, a coffee shop, teaching kitchen, event spaces and a retail market. Job Description - Assist, support, and communicate overall bread production for multiple kitchens across a dynamic restaurant and bakery environment. - Accurately read recipes and prepare mise en place/scale ingredients to produce a variety of bread and bakery items. - Must have a basic understanding of dough development, fermentation, shaping, and scoring techniques. (boules and batards / loaves) - Must be able to maintain clear and consistent communication regarding updates to bread production, product status, and finished products. - Evaluate doughs and finished products to make sure the quality standards are met. Be able to make basic adjustments or corrections when needed. - Consistently log and track bread production, complete transfer logs between departments, and document temperature logs as required. - Minimize product and ingredient waste and document any spoilage or waste that does occur. - Must have an understanding of pars, production rotation, and the First In, First Out (FIFO) method. - Maintain a clean, organized, and safe work environment while working in close quarters and close proximity with coworkers.  -Assist and understand the pastry department when bread production is handled. -Fulfill pastry and bread orders on time and up to quality expectations. -Reliably close the bakery in a timely manner using proper chemicals as necessary. SCHEDULE: This is not a Monday through Friday job. It requires a flexible schedule that includes days, nights, weekends, and especially holidays.   RESPONSIBILITIES TO SAFETY: Protect the safety of yourself, team members and Ginger and Baker Guests at all times. Promptly report any incidents and/or potentially harmful equipment or situations to the immediate supervisor and/or appropriate department(s). Report/document safety-related incidents at once to immediate supervisor and appropriate department(s), following documented procedures. Follow all company and department safety policies and procedures as required. Operate equipment in a safe manner that will not lead to injury of yourself or others. QUALIFICATIONS To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. EDUCATION and EXPERIENCE Minimum 2 years baking/pastry experience in a professional kitchen, high-volume experience preferred. Pastry/Baking degree is a plus MATHEMATICAL SKILLS Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals.  Able to accurately read and make measurements. DISCRETION/ INDEPENDENT JUDGEMENT You will have to take initiative and get creative in resolving challenges and involve the Chef when previous methods have been unsuccessful. Remain calm under pressure. CERTIFICATES, LICENSES, REGISTRATIONS Required ServSafe Food Handlers Certificate.
