The Senior Assistant Kitchen Manager plays a key leadership role in Back of House operations, supporting the Executive Kitchen Manager and leading the kitchen team to deliver high-quality food, maintain standards, and uphold Chicken N Pickle’s core values. This role involves daily oversight of kitchen performance, staff development, compliance, and financial controls.
Key Responsibilities
Daily Duties
- Input invoices, credit memos, prep, and waste logs
- Perform Master Walk Thru and verify prep lists
- Oversee prep quality, storage, and rotation
- Conduct AM and PM line checks
- Manage rosters and coverage for three shifts
- Ensure sanitation protocols at open and close
- Execute Quick Fire drills and family meals
- Place Sysco/produce orders via Crunchtime
- Review prior day labor vs. posted schedule
Additional Responsibilities
- Update pars for ordering guides and events
- Refresh ITG Board and family meal calendar
- Write and follow up on pre-shift agendas
- Upload culinary ops/financial recaps
- Review/approve HOH schedule by Wednesday
- Assess staffing and pars with EC
- Monitor COGS, smallwares, disposables, and chemical budgets
- Conduct 1:1s with direct reports
- Verify inventory and review COGS with EC
- Update Master Walk Thru, line checks, and order guides
- Submit smallwares orders
- Lead LTO planning and submissions
- Review Steritech wins and opportunities
- Coordinate daily BOH operations
- Oversee recipe execution, prep, and team performance
- Support hiring, training, development, and evaluations
- Maintain budgetary needs and safety/sanitation compliance
- Foster a culture of diversity, equity, inclusion, and team recognition via Workplace
Qualifications
- Experience as a high-volume Kitchen Manager or Sr. Sous Chef
- Bilingual preferred
- Strong knowledge of culinary trends and techniques
- Proficient in BOH systems (Excel, Word, etc.)
- Ability to follow CNP and regulatory sanitation standards
- Strong leadership, organizational, and communication skills
- Ability to perform in a fast-paced indoor/outdoor setting, including evenings, weekends, and holidays
- Culinary certification or degree in Restaurant Management is a plus

Compensation: Starting Range $65,000 + Bonus Structure
