THE JOB:

Are you a culinary leader who thrives in high-volume, fast-paced environments and takes pride in fueling the team behind the magic? MGM National Harbor is seeking an Executive Chef to lead our high-volume Employee Dining Room (EDR) operations. In this critical leadership role, you will own the daily culinary operations, drive fiscal and labor productivity, and design menu strategies that sustain our world-class workforce. THE DAY-TO-DAY:

  • Owns, leads and oversees daily commissary kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of menu strategies to produce both short-term and long-term profitability.

  • Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules and regulations for the commissary staff.

  • Maintain the highest standards of health, sanitation and cleanliness within all areas of the kitchens.

  • Manages Human Resources responsibilities for commissary kitchens to include, creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company’s diversity commitment;

  • Interacts with guests to ensure satisfaction and product quality. Reviews BEOs, SEOs and MEOs daily to ensure that orders executed upon. Reacts to any feedback on guest complaints and takes any appropriate action.

  • Collaborate with divisional Directors, Executive Chefs, and kitchen team to ensure a seamless execution of product delivery between kitchens inclusive of time standards, recipe specifications, and quality.


THE IDEAL CANDIDATE:

  • Three years of prior relevant experience

  • Previous experience managing employees under a collective bargaining agreement preferred

  • Ability to work a varied shift to include weekends, holidays, and evenings

Pay Range:

The pay range for this role is:

$85,400.00 - $113,900.00

This range represents a good faith estimate of the salary range that MGM reasonably expects to pay for the position upon hire. The actual salary offer will take into account a wide range of factors, including location.

This position is eligible to participate in the Company’s incentive plan.

Employees in this position are eligible to participate in medical, dental, vision, life insurance, 401(k) plans, and time off plans. Specific program offerings vary by eligibility factors such as geographic location, employment status, and union membership.
