Commissary Kitchen Production Supervisor

Job Responsibilities

Overall accountability for the daily operations of the Commissary.  Manage, direct and lead commissary associates to meet daily production goals of the commissary operations.

  • Food safety 
    • Ensure associates are following proper food safety guidelines and regulations.
    • Utilize Temperature system to monitor safety walks and cook / cool temps.
  • Food Quality/Consistency
    • Ensure recipe accuracy and yields.
    • Spot check and test product throughout the kitchen.
  • Purchases
    • Work with buyer and the Director of Commissary to review purchases and products to see if we are purchasing the best products for our business.
      • Take over Bunzl purchasing.
  • Equipment efficiencies
    • Equipment audits to ensure associates know how to use all equipment.
    • Work to create a PM schedule with the in-house maintenance team.
  • Product Development
    • New recipe development
    • Seasonal menu review
    • Holiday production and needs.
  • AD planning
    • Work with production team and the Dir. of Commissary on company circulars. 

Hiring, Promoting, and recruiting of associates.

  • New hire training and training program


Caterease power user and train catering team and other key associates on how to use it.  

Associate accountability with job performance and company policy

Direct reports include Production Mgr., Packing Supervisor, Catering Supervisor, and Receiver.

Other duties as assigned by supervisor


Education & Experience 

• The ideal candidate should have a minimum of 1 years’ experience in Prepared Foods management.
