Qualifications:
- 2 years of experience in high volume, scratch food production.
- Culinary Arts degree or equivalent is a plus
- Knowledge of kosher dietary laws a plus
- Must be able to read and follow a recipe unsupervised
- Ability to follow recipes in a HACCP format and scale recipes to meet ordered daily quantities, converting volume and weight measurements as needed.
- Must be able to bend, reach, stoop, push, and pull, raise arms above head, twist and grip items with or without assistance
- Must be able to stand for long period of time
- Must be able to use both hands and capable of performing repetitious duties
- Ability to read, write and speak English
- Must be able to correctly and safely use standards kitchen equipment. Chef’s knives; Convection ovens; Meat slicing machines, steamers, mandolins, grills, and broilers etc.
- Food Handler Certification from Los Angeles County Department of Health Services.
- Must have valid CA driver’s license and proof of insurance
- Travel to multiple work sites may be required
- Must be able to lift 40 pounds with or without assistance
- Must pass a criminal background check (Live Scan fingerprinting) prior to beginning employment
Responsibilities/Essential Functions:
- Work with Lead Cook and Kitchen Manager to prepare Subscription Meal program menu and support regular program menu items detailed in food production order following HACCP format recipes
- Observe all requirements of Jewish Dietary Laws and HACCP requirements of funding agencies.
- Responsible for all food production cooking, dicing, slicing, baking and record keeping.Â
- Keep records of number of meals and temperatures according to HACCP
- Label and date all prepared food items, serving and discarding as required by food safety requirements
- Record and maintain all daily food temperature record logs
- Prepares food according to menu, recipes and special events/caterings as needed
- Produce accurate number of food portions according to daily production orders
- Ensure all food temperatures are within required food safety ranges before food leaves kitchen, performing corrective action if required.Â
- Assist with packing of individual meals on the packing line
- Assist with packing and distribution of meals to Congregate and HDM drivers
- Follow FIFO rotation system with all products utilized in food production.
- Inventory foods needed for menu production in advance of production day
- Participate in the general sanitation /cleaning of the HKK
- Reports any needs or issues to Kitchen Manager.
- Assist with Lead Cook duties when s/he are absent
- May be asked to deliver or drive delivery truck as needed
- Ability to efficiently and effectively prioritize and multitask to meet daily production needsÂ
- Other duties as assigned
