Nixtamal OperatorÂ
Role Overview
The Nixtamal Operator is responsible for cooking, grinding, and preparing nixtamal in accordance with company standards and regulatory requirements. This position requires strong attention to detail, mechanical aptitude, and the ability to work safely in a fast‑paced food manufacturing environment.
Work Schedule
3rd Shift
Monday–Friday: 9:45 PM – 6:00 AM
Sunday: 11:00 PM – 4:00 AM
(Shift schedule may vary based on production needs.)
Key Responsibilities
Regulatory & Safety Compliance
Follow all OSHA, EPA, FDA, HACCP, SQF, and plant‑specific regulations.
Wear required PPE and adhere to all safety procedures.
Use lockout/tagout procedures when performing maintenance or clearing equipment.
Support all food safety, quality assurance, and SQF initiatives.
Nixtamal Production
Cook nixtamal and ensure pH and moisture levels meet specification.
Operate and monitor two stone‑plate grinders.
Run conveyors to transfer corn from reactors to grinders.
Learn to engrave and replace grinder stones as needed.
Monitor machinery temperatures to maintain product quality.
Perform safe and accurate equipment start‑up and shutdown procedures.
Quality Control
Inspect raw materials for defects in color, appearance, and expiration.
Verify in‑process product meets specifications for color, appearance, diameter, and weight.
Track yield and develop strong cooking and evaluation skills.
Manage wastewater and ensure nejayote pH is within acceptable limits before release.
Documentation & Communication
Record batch details and cooking times on production boards.
Complete mixing logs and required documentation accurately.
Report product deviations or equipment issues to the Lead or Supervisor immediately.
Sanitation & Maintenance
Clean machinery daily according to sanitation standards.
Maintain a clean, organized, and safe work environment.
Other Duties
Perform additional tasks as assigned to support department and business needs.
