Our menus reflect this attention to bringing nutritious, delicious food to those who need it most. Position Overview ***Must be able to work in a refrigerated environment*** The Cold Line Commis Chef is responsible for high-volume preparation and assembly of cold food items in a refrigerated production environment. This role supports the daily output of large-scale meal production by executing recipes with precision, maintaining food safety standards, and ensuring efficiency on the cold line or packaging station. The ideal candidate is detail-oriented, thrives in fast-paced settings, and is comfortable working in cold conditions for extended periods. Responsibilities Cold Food Preparation & Assembly – 45% Prepare and assemble cold food items following standardized recipes Wash, clean, chop, and portion ingredients for large-scale production Execute recipes accurately while maintaining consistency and presentation standards Support both cold line production and packaging operations as needed Production Execution & Efficiency – 20% Follow daily production plans and direction from chefs and shift leads Maintain speed and accuracy in a high-volume environment Meet strict production timelines and output goals Food Safety, Sanitation & Compliance – 20% Adhere to all food safety regulations, GMPs, and sanitation standards Maintain strict personal hygiene and safe food handling practices Ensure proper temperature control and safe handling of perishable items in a refrigerated environment Workstation Setup, Organization & Cleanliness – 10% Set up and break down workstations with all required tools and ingredients Maintain clean, organized, and fully stocked stations throughout shifts Follow proper cleaning and sanitation procedures at all times Team Collaboration & Communication – 5% Communicate effectively with team members and leadership Support team workflow and assist with production challenges Maintain a positive and collaborative attitude QualificationsRequired Qualifications NY Food Handler’s Certificate/Card Ability to work in refrigerated rooms for extended periods 1+ year of high-volume food prep, packaging, or kitchen production experience Strong understanding of food safety and sanitation practices Ability to stand for long periods and lift 50+ lbs Preferred Qualifications NY Food Handler’s Certificate/Card Bilingual (English/Spanish) Experience in commissary or large-scale food production kitchens Key Competencies Follows recipes and ensures consistent product quality Works quickly without compromising accuracy Strong knowledge of sanitation and cold chain handling Comfortable working in cold environments and shifting priorities Collaborates effectively in a high-volume production setting Maintains clean, orderly workspaces under pressure Role Details Title: Commis Chef Location: East Williamsburg, Brooklyn Facility Schedule: Monday–Friday & Sunday shifts available starting as early as 6am Reports to: Executive Sous Chef Compensation: $18 - $19 DOE Benefits Medical insurance Sick leave Paid time off that increases with tenure 401(k) Daily family meal Potential for bonuses through our Green Shares employee bonus program Eligibility and details subject to company policy Green Top Farms is an equal opportunity employer and is committed to fostering a diverse and inclusive workplace.
