Join the opening team at Ondîne, the newest concept from John Fraser Restaurants — an intimate 35-seat restaurant where every server is also a Sommelier. Guests will experience thoughtful hospitality, exceptional cuisine, and a wine program with real depth in France, exploring regions that rarely get this kind of spotlight alongside other classic growing areas, led by Amy Racine.

We are seeking experienced Sommeliers for a rare opportunity: working alongside a team of fellow sommeliers, all deeply engaged with guests across food, wine, and the entire dining experience. This is a chance to be part of a close-knit opening team, helping establish the culture, standards, and hospitality that will define Ondîne from day one. Ideal candidates thrive in refined dining environments, value guest connection, and are committed to the pursuit of hospitality.

What We're Looking For

• A warm, approachable, and modern point of view on wine; comfortable discussing an emerging producer with the same enthusiasm as a benchmark name and genuinely welcoming to guests at every stage of their wine journey.
• Ability to develop deep, comprehensive knowledge of an extensive and continually evolving wine list.
• A background in refined, guest-focused dining that reflects real dedication to craft and hospitality.
• In-depth knowledge of culinary technique and ingredients, with the ability to speak to the kitchen's dishes.
• A genuine passion for wine, food, and hospitality.
• Strong knowledge of French wine regions, varietals, and thoughtful food and wine pairings.
• Confidence in providing polished table service while guiding guests through the wine program.
• Warm, gracious hospitality with exceptional communication and attention to detail.
• A collaborative mindset, strong work ethic, and desire to continuously learn and grow.
• Full-time evening, weekend, and holiday availability.

What You'll Do
As a Sommelier, you'll deliver memorable dining experiences through exceptional table service and knowledgeable wine recommendations, guiding guests through a wine list with real depth in France, often in lesser represented areas. The wine program is an especially important part of what makes Ondîne unique, and you'll help maintain its integrity, ensure proper wine presentation and service, support inventory and special events, and contribute to a culture of excellence, teamwork, and continuous learning.
