Claw and Hammer is seeking a passionate and highly skilled Sous Chef to support our culinary leadership team in delivering an exceptional fine dining experience. The Sous Chef plays a critical role in daily kitchen operations, menu execution, staff leadership, and upholding the highest standards of quality, consistency, and presentation.
Key Responsibilities
Culinary Operations
- Assist the Executive Chef in all aspects of kitchen management and food production
- Ensure consistent execution of menu items to Claw and Hammer’s fine dining standards
- Oversee daily prep, service, and plating to ensure precision, timing, and quality
- Contribute to menu development, seasonal specials, and tasting menus as needed
Leadership & Team Development
- Supervise, train, and mentor line cooks and kitchen staff
- Lead shifts in the absence of the Executive Chef
- Foster a professional, respectful, and collaborative kitchen culture
- Enforce proper kitchen procedures, safety standards, and sanitation practices
Quality Control & Compliance
- Maintain strict adherence to food safety, sanitation, and health regulations
- Monitor ingredient quality, freshness, and proper storage
- Ensure compliance with company policies and local health department standards
Inventory & Cost Control
- Assist with ordering, receiving, and inventory management
- Minimize food waste and support cost-control initiatives
- Help manage portion control and recipe adherence
Qualifications
- Minimum 3–5 years of culinary experience, including experience in a fine dining or upscale restaurant
- Prior Sous Chef or Lead Line Cook experience strongly preferred
- Strong knowledge of classic and modern cooking techniques
- Experience with high-quality proteins, seafood, and refined presentation standards
- Proven leadership and communication skills
- Ability to work evenings, weekends, and holidays
- Culinary degree or equivalent professional experience preferred
