Claw and Hammer is seeking a passionate and highly skilled Sous Chef to support our culinary leadership team in delivering an exceptional fine dining experience. The Sous Chef plays a critical role in daily kitchen operations, menu execution, staff leadership, and upholding the highest standards of quality, consistency, and presentation.

Key Responsibilities

Culinary Operations

  • Assist the Executive Chef in all aspects of kitchen management and food production
  • Ensure consistent execution of menu items to Claw and Hammer’s fine dining standards
  • Oversee daily prep, service, and plating to ensure precision, timing, and quality
  • Contribute to menu development, seasonal specials, and tasting menus as needed

Leadership & Team Development

  • Supervise, train, and mentor line cooks and kitchen staff
  • Lead shifts in the absence of the Executive Chef
  • Foster a professional, respectful, and collaborative kitchen culture
  • Enforce proper kitchen procedures, safety standards, and sanitation practices

Quality Control & Compliance

  • Maintain strict adherence to food safety, sanitation, and health regulations
  • Monitor ingredient quality, freshness, and proper storage
  • Ensure compliance with company policies and local health department standards

Inventory & Cost Control

  • Assist with ordering, receiving, and inventory management
  • Minimize food waste and support cost-control initiatives
  • Help manage portion control and recipe adherence

Qualifications

  • Minimum 3–5 years of culinary experience, including experience in a fine dining or upscale restaurant
  • Prior Sous Chef or Lead Line Cook experience strongly preferred
  • Strong knowledge of classic and modern cooking techniques
  • Experience with high-quality proteins, seafood, and refined presentation standards
  • Proven leadership and communication skills
  • Ability to work evenings, weekends, and holidays
  • Culinary degree or equivalent professional experience preferred
