  • Keeping kitchens, dish areas, equipment, and back-of-house spaces clean, organized, and ready for the next day's operation.
  • Completing overnight cleaning duties independently and ensuring the kitchen is fully prepared before the morning team arrives.
  • Supporting the Stewarding team with dish area closing operations and stepping in when the team needs additional help.
  • Cleaning and sanitizing floors, drains, sinks, cutting boards, refrigeration units, stainless steel surfaces, ovens, grills, fryers, and other kitchen equipment.
  • Emptying, rinsing, and re-bagging trash cans and keeping waste areas clean and organized.
  • Pulling, spraying, sweeping, and mopping floor mats and kitchen floors.
  • Organizing pot and pan shelving and keeping storage areas neat and accessible.
  • Returning items that are not sufficiently cleaned for a second wash.
  • Reporting maintenance concerns, safety issues, or other problem areas to the Manager on Duty.
  • Following daily cleaning checklists while adjusting priorities based on staffing levels and business volume.
  • Taking on additional cleaning and utility tasks as needed to support the Food & Beverage operation.
  • Working independently while maintaining excellent communication, teamwork, and attention to detail.

Education and Experience

  • Previous stewarding, kitchen, janitorial, housekeeping, or utility experience preferred.
  • Previous hotel, restaurant, resort, or hospitality experience preferred.
  • Ability to follow verbal and written directions.
  • Ability to work with industrial cleaning supplies and equipment safely and according to procedures.
  • Ability to work independently with minimal supervision.
  • Ability to successfully multitask and prioritize several duties at one time.
  • Knowledge of basic kitchen sanitation and cleaning procedures preferred.
  • Ability to work overnight shifts, weekends, holidays, and overtime as needed based on business needs.
  • Must maintain awareness of safety and accident prevention procedures and promptly report accidents, incidents, or unsafe conditions.

Work Environment and Physical Requirements

  • Ability to work overnight hours, including independently from approximately 11:00 PM until the morning kitchen team begins work.
  • Ability to stand, walk, bend, reach, kneel, squat, push, pull, and move throughout the shift.
  • Ability to exert well-paced mobility and remain on your feet for extended periods.
  • Ability to lift and transport items weighing at least 50 pounds.
  • Ability to push and pull carts and other equipment weighing up to 250 pounds.
  • Ability to work in kitchens, dish areas, storage areas, banquet kitchens, pastry kitchens, and other back-of-house spaces.
  • Ability to work with cleaning chemicals, grease, hot equipment, wet floors, and other conditions commonly found in a commercial kitchen environment while following all safety procedures.
  • Ability to safely operate and clean kitchen equipment and maintain a sanitary work environment.
