The Executive ChefĀ is responsible forĀ all Food & Beverage operations, related costs, procedures, quality, and allĀ back of houseĀ labor percentages & budgets. An effective Executive ChefĀ is able toĀ generate revenue, controlĀ costsĀ and lead and develop a team.Ā
WHAT YOUāLL DO:Ā
Financial Performance of DepartmentĀ Ā
Meet or exceed budgetary expectationĀ
Control Food,Ā BeverageĀ and Labor costsĀ
Manage Operating AccountsĀ
Monitor,Ā maintainĀ and control inventory bi-weekly to Brooklyn Bowl standardsĀ
Develop menu engineering program to project andĀ monitorĀ trendsĀ and predict costĀ
Supervision of the DepartmentĀ
Ensure proper execution of all corporate mandates, SOPās, and specificationsĀ
AssistĀ and support kitchen management in any of their job functions as neededĀ
Ensure positive and creative team environment within departmentĀ
Facilitate open communication with the Sous Chefs,Ā supervisorsĀ and staffĀ
Facilitate proper inter-departmental communications and organizationĀ
Conduct staff evaluations (training, 90-day, annual).Ā Ā Set written development and performance goals for all team members andĀ monitorĀ progressĀ
Ensure complete and satisfactory on-going staff training per corporate training programĀ
MaintainĀ appropriate staffingĀ levels. Recruit and hire staff/supervisors and ensure that hiring/disciplinary/termination standards follow all Brooklyn Bowl guidelinesĀ
Oversee performance evaluations and raise recommendations to AGM and/or GMĀ
Maintain open door policy and build strong professional relationships with staffĀ
Make business decisions that areĀ based on informationĀ and follow up on efficientlyĀ
Information is gathered,Ā sharedĀ and used appropriatelyĀ
Hold monthly department meetings to ensure proper communication and teamworkĀ
Hold individual performance counseling meetings with each Sous Chef and Supervisor on a regular basisĀ
Hold weekly Kitchen Manager meetingsĀ
Ensure adherence to safety guidelinesĀ
Special Events CateringĀ
Plan and execute menus for private parties, corporate rentals, VIP receptions, album release events, and other venue-hosted functions.Ā
Conduct tastings with event clients and management when needed.Ā
Build custom catering packages based on eventĀ objectives, budget, and guest count.Ā
Coordinate event-day culinary timelines, including prep, setup, service execution, and breakdown.Ā
Collaborate with event coordinators, bar staff, and production teams to ensure seamless food service integration with event schedules.Ā
Manage buffet setups,Ā passedĀ appetizers, plated service, and other catering formats depending on event needs.Ā
Oversee rental equipment requirements (e.g.,Ā chafers, service ware, displays) and ensure proper setup and return.Ā

Build SalesĀ
Work with Corporate Food and Beverage to create cost-effective specials and menu changes to achieve maximum salesĀ
Ensure that bi-annual Restaurant menu roll-out is executed to specificationsĀ
Maintain food quality level that provides excellent value and increases guest visit frequencyĀ
Participate in fundraising events and community appearances to increase Brooklyn Bowl awarenessĀ
Maintain Operation SuppliesĀ
Ensure that staffĀ hasĀ supplies needed toĀ facilitateĀ jobĀ
Provide staff with proper equipment training when hiredĀ
Maintain all equipmentĀ
Organize and plan all events to Brooklyn Bowl specificationsĀ
Ensure housekeeping standards are compliant with inspection guidelines and Local Health CodeĀ
Utilize Brooklyn Bowl Back of House tools and systems consistently to use results and data to improve businessĀ
Brooklyn Bowl specification forms are updated and used to ensure consistencyĀ
Maintenance and Update of Micros, Labor Systems and Crunch TimeĀ
Enter employee data in system prior to any work is performedĀ
Ensure that all employee data is correct in system ā job class, current wage data, etc., and thatĀ accurateĀ employee file information is maintainedĀ
Maintain and update menuĀ itemĀ countsĀ
Audit and enter employeeĀ time cardĀ adjustment sheets into labor system for accuracy and trackingĀ
FoodĀ
Uphold food standards per Brooklyn Bowl specifications. Obtain proper approvals for any changesĀ
Monitor food portions and provide recommendations for any necessary revisions to Corporate Food and BeverageĀ
Provide quarterly new menu item recommendationsĀ
Report guest and crew feedback and ensure issue resolutionĀ
Ensure 100% recipe adherenceĀ

WHAT YOUāLL NEED:Ā
Required:Ā
Minimum 5 years of kitchen management and fine dining cooking experience in leadership roleĀ
Skilled in cooking, cost controls, management, crewĀ trainingĀ and developmentĀ
Working knowledge of kitchen and dishwashing proceduresĀ
Knowledge of food and beverage,Ā laborĀ and product costsĀ
High levelĀ of catering knowledge (planning and execution of SEO events)Ā
Computer savvy ā Working knowledge/experience with Excel worksheets, databases, word processing and MicrosĀ
Ability to run all kitchen operationsĀ
Able to lift at least 50 lbs. and stand forĀ long periodsĀ of time (10 ā 12 hours)Ā
Tolerant of extreme heatĀ
Comfortable working in a fast-paced and loud environmentĀ
