JOB SUMMARY

Responsible for maintaining control of sanitation and general maintenance in the kitchens and equipment, assuring proper working order and storage. Promote Family Style Service culture through actions and positive attitude. 

HOW YOU WILL CREATE THE EXTRAORDINARY

  • Must oversee the stewards in the cleaning and storage of all wares in Food & Beverage, including all major equipment. 
  • Responsible for scheduling the cleaning of all areas, equipment, and for organizing inventory.
  • Must inspect the kitchens, workrooms, and equipment for cleanliness and general order.
  • Responsible for ensuring the staff is disposing of trash, grease, chemicals and food according to health department standards.
  • Responsible for proper chemical use, chemical inventory, and ordering of supplies.
  • Responsible for directing the efficient and effective cleaning of all areas, inclusive of walls and floors.
  • Assist F&B Management with hiring, interviewing, scheduling, disciplining and evaluating all staff.  Monitor staffs start times, breaks and ending times.
  • Maintain team member files and attendance records.
  • Have complete knowledge of all casino events and promotional activities, and assist as needed.
  • Adhere to regulatory, departmental, and Company policies in an ethical manner and empower and require others to do the same. 
  • Handle routine customer complaints and incidents, and exhibit the appropriate discretion to identify situations requiring the attention of supervisory personnel - seek to resolve all situations in a manner that maintains positive guest relationships.
  • Must be able to work a flexible schedule as required by business operations, including late nights, weekends, and holidays; shifts may change.
  • Perform other duties as assigned or reasonably requested by any member of management.

The Gaming Analytics Department is responsible for leading all analytical work related to table games, slots, poker and other gaming products. Our team works with table games and slots operational leadership, Shared Services (ESS Gaming), and property leadership (AGMs/GMs) to optimize the gaming floor and explore/test new products. Some of their activities include:
  • Gaming asset optimization: making recommendations for the types of table games and number of slot units necessary to satisfy demand.
  • Creating and updating recurring product performance models and reports
  • Advising gaming leadership: analyzing and reporting on the financial performance and profitability of table games and slot units on a monthly basis.
  • Assisting with ad hoc analyses
