ESSENTIAL DUTIES: Plans individual cooking schedule so that all foods assigned to prepare will be properly cooked and ready at the appropriate time. Assembles items needed for preparation from refrigerators, freezers, and storerooms. Follows standardized recipes and portioning procedures to prepare meats, gravies, casseroles, vegetables and desserts that require preparation and/or cooking. Tastes all food during preparation to ascertain if foods are seasoned and cooked correctly; makes adjustments to seasoning and cooking time as necessary. Merchandises foods to be served in the dining room and at special functions in such a way to make them attractive and easily served in standardized portions. Monitors trayline and dining rooms throughout serving periods to ensure that foods are available to replenish when needed without delay. Keeps cooking area in kitchen clean and orderly at all times, following outlined cleaning procedures.
