Location Overview
Join our team in Amangiri. Blending into untouched red-rock country on over 900 acres of the Colorado Plateau, Amangiri and its satellite, Camp Sarika, reflect dual aspects of this ancient desert landscape. A serene sanctuary, Amangiri’s 34 modernist suites, Aman Spa and mesa-embracing pool echo the tranquillity of the canyons. Camp Sarika, with its 10 tented pavilions, answers the region’s call to adventure. An unrivalled base for exhilarating expeditions and fireside connection, the camp has its own restaurant, lounge and spa suites.

Role

The Sous Chef – Pastry is responsible for providing overall leadership, creative development, and quality assurance for Amangiri’s pastry operations. This role supports the Pastry Chef in directing product conceptualization, menu engineering, recipe development, and cost control while ensuring consistently high-quality desserts and baked goods aligned with Aman’s exceptional culinary standards.

Key Responsibilities

  • Satisfy guest needs and exceed expectations by delivering innovative, high-quality pastry offerings.

  • Develop and execute seasonal dessert and bread menus based on availability, trends, and cost considerations.

  • Monitor ingredient inventory and order supplies to ensure consistency and prevent shortages.

  • Supervise preparation and timely production of all pastry menu items while maintaining high standards.

  • Establish and maintain standard pastry recipes and procedures; ensure accurate documentation.

  • Assist in maintaining accurate food and labor cost tracking; support the Pastry Chef with cost management tools.

  • Enforce hygiene, food safety, and sanitation standards in compliance with health codes and Aman protocols.

  • Provide leadership to the pastry team, including training, coaching, scheduling, and performance management.

  • Collaborate with the Executive Chef, Executive Sous Chef, and other kitchen leaders to ensure menu synergy and operational efficiency.

  • Maintain a clean, organized, and efficient kitchen environment while adapting to changing business demands.

Required Experience & Qualifications

  • At least 5 years of previous pastry management experience in a luxury or high-end culinary environment.

  • Strong technical knowledge of pastry production and kitchen procedures.

  • Culinary degree preferred or equivalent hands-on experience.

  • Proven leadership skills with the ability to manage, train, and motivate a team.

  • Highly organized with excellent attention to detail and a passion for quality.

  • Proficient in cost control, ordering, inventory management, and recipe standardization.

  • Ability to work collaboratively in a fast-paced and dynamic environment.

  • Committed to food safety standards, sanitation, and professional kitchen practices.

  • Flexibility to work evenings, weekends, and holidays as business demands.

  • Able to handle multiple tasks with poise and professionalism under pressure.
