About the Role:

As our Prep Cook, you will support the Culinary team by preparing ingredients and assisting with daily food production for the hotel's restaurants, banquets, events, and other food and beverage operations. You will ensure ingredients are properly prepared, stored, labeled, and ready for service while maintaining high standards of quality, cleanliness, and food safety.

This role is ideal for someone who enjoys working in a fast-paced kitchen, takes pride in quality and consistency, and is eager to grow their culinary skills while contributing to a strong team environment.

Your Impact – Culinary Support

You will play an important role in keeping the kitchen organized, prepared, and ready for service. Your attention to detail and consistency will help the Culinary team maintain efficient operations, high-quality food, and exceptional dining experiences for our guests.

What You'll Be Doing

Food Preparation

  • Prepare vegetables, fruits, meats, seafood, sauces, dressings, garnishes, and other ingredients according to recipes and established standards
  • Wash, peel, cut, chop, slice, dice, portion, and prepare ingredients as directed
  • Complete daily mise en place according to production needs and service levels
  • Follow standardized recipes and preparation procedures to ensure consistency
  • Measure and portion ingredients accurately
  • Assist cooks and chefs with food preparation as needed
  • Prepare ingredients for restaurant, banquet, catering, and special event operations

Kitchen Operations

  • Maintain organized and fully stocked workstations throughout each shift
  • Communicate with cooks and supervisors regarding preparation needs and production levels
  • Assist with setting up and breaking down kitchen workstations
  • Ensure ingredients and prepared items are available for service according to production schedules
  • Assist with receiving, organizing, and storing food deliveries
  • Properly label and date prepared foods and ingredients
  • Follow FIFO procedures to ensure proper product rotation
  • Assist with maintaining appropriate inventory levels

Food Quality & Presentation

  • Follow recipes, portion standards, and preparation instructions consistently
  • Inspect ingredients for freshness, quality, and proper condition
  • Report spoiled, damaged, or poor-quality products to a supervisor
  • Maintain consistency in portion sizes and preparation
  • Assist with garnishes and other food presentation needs
  • Help ensure all food is prepared and stored according to established standards

Food Safety & Sanitation

  • Follow all HACCP, food safety, sanitation, OSHA, and local health department regulations
  • Maintain proper food handling, storage, labeling, and temperature control procedures
  • Wash hands and maintain proper personal hygiene throughout each shift
  • Clean and sanitize workstations, cutting boards, knives, utensils, and equipment
  • Properly store food and maintain appropriate temperatures
  • Prevent cross-contamination by following established food safety procedures
  • Properly handle cleaning chemicals and use required personal protective equipment (PPE)
  • Report food safety concerns, equipment issues, or hazards promptly

Kitchen Cleaning & Organization

  • Keep preparation areas, equipment, and workstations clean and organized
  • Assist with cleaning kitchen equipment and food preparation areas
  • Maintain clean and organized refrigerators, freezers, and storage areas
  • Properly dispose of food waste and maintain waste areas
  • Assist with end-of-shift cleaning and kitchen breakdown
  • Maintain a safe and efficient work environment

Banquets & Events

  • Assist with food preparation for banquets, meetings, catering, and special events
  • Prepare large quantities of ingredients and food items according to event requirements
  • Support the Culinary team with event setup and breakdown
  • Complete production tasks according to event timelines and service needs
  • Maintain food quality and consistency during high-volume production

Team Collaboration

  • Work closely with Chefs, Cooks, Stewards, Banquets, and Food & Beverage teams
  • Communicate effectively with supervisors and culinary team members
  • Respond promptly to preparation and production requests
  • Assist other Culinary team members during busy service periods
  • Maintain a positive, respectful, and collaborative work environment
  • Support other kitchen duties as assigned based on business needs

Technical / Role-Specific Requirements

  • Previous prep cook, line cook, restaurant, hotel, or food service experience preferred
  • Basic knowledge of food preparation and kitchen procedures
  • Ability to safely operate basic commercial kitchen equipment
  • Basic knife skills and ability to safely use kitchen knives
  • Knowledge of proper food handling and sanitation procedures
  • Ability to accurately measure and portion ingredients
  • Ability to follow standardized recipes and preparation instructions
  • Food Handler Certification required or ability to obtain upon hire

Preferred Qualifications

  • Previous experience in a hotel, resort, restaurant, or high-volume kitchen preferred
  • Culinary school or formal culinary training is a plus
  • Experience supporting banquet or catering operations is a plus
  • Familiarity with HACCP and food safety standards
  • Experience working with high-volume food preparation
  • Bilingual abilities are a plus

Physical Requirements

  • Ability to stand and walk for extended periods throughout the shift
  • Frequently lift, carry, push, and pull up to 50 pounds
  • Ability to bend, stoop, kneel, reach, and perform repetitive physical tasks
  • Ability to safely use knives and kitchen equipment
  • Comfortable working in hot, humid, and fast-paced kitchen environments
  • Ability to move throughout kitchen, storage, banquet, and food service areas as required

Education

  • High school diploma or equivalent preferred
  • Culinary education or training preferred but not required
  • Equivalent combination of education, training, and relevant experience will be considered
