Job Purpose or Objective(s): You will manage a food service operation following Travel Plaza procedures and SOPs assume primary responsibility for achieving Guest Service, profit, sales and employee Profit and Loss targets. You will report to the Store Manager.
Primary Tasks:
- You will control daily operations by scheduling labor according to our needs, placing orders to meet business demands with no outages, coaching training, and developing the food service team.
- Ensure all food items are prepared per menus and SOPs.
- Adjust equipment to regulate temperature of ovens, broilers, grills, roasters and steam kettles for best results.
- Clean and sanitize work area a.,nd food preparation equipment according to Sanitation Standards.
- Ensure compliance with sanitation and safety programs to maintain behaviors to minimize employee and guest injury or illness. These standards include hand washing, sanitation, food handling/storage and time and temperature controls. Store food in designated areas, using knowledge of time and temperature requirements and food spoilage; document on all required Kitchen Logs.
- You will receive products from venders following correct procedures. Documenting bad merchandise/write-offs per Travel Plaza policy; participate in product testing and development. Provide feedback to General Manager.
- Oversee food service workers to include recruiting, interviewing, hiring, and training team members. Coach and document poor performance or sub-standard behavior; conduct performance evaluations.
- Ensure complete execution of marketing campaigns and sales promotions while managing Profit and Loss of the food service operation.
- Provide physical maintenance and sanitation of the facility.
- Perform other responsibilities as assigned.
Requirements:
- Acquire and maintain Choctaw Nation Food Handler's certification and Serv Safe certification
- Computer experience – Word and Excel (can maintain complex spreadsheets)
- Be on feet 6+ hours per shift
- Two (2) years paid or volunteer cooking experience
- One (1) year of retail/food sales associate experience
