Job Summary
The Assistant Restaurant Manager at Clementine plays a key role in delivering a refined yet approachable dining experience, ensuring seamless daily operations, elevated service standards, and strong team leadership. This position is highly hands-on, with a focus on service execution, training, reservations management, and operational efficiency, while maintaining the unique identity and energy of Clementine.
Essential Job Responsibilities
- Daily Operations & Line-Ups
- Lead daily pre-shift line-ups, aligning the team on service standards, menu updates, VIP guests, and reservationsÂ
- Communicate priorities clearly and set expectations for each shiftÂ
- Â Drive consistency, energy, and accountability across all service periodsÂ
- Training & Development
- Support onboarding and continuous development of front-of-house team membersÂ
- Reinforce Forbes-level service standards and Estate Yountville cultureÂ
- Conduct role plays, service audits, and ongoing coachingÂ
- Ensure team knowledge of food, beverages, and storytelling of the Clementine conceptÂ
- Payroll & Labor Management
- Assist with payroll accuracy, approvals, and timely submissionsÂ
- Monitor labor costs and productivity in alignment with budgetÂ
- Support scheduling based on business levels, reservations, and occupancyÂ
- Ensure compliance with California labor laws and company policiesÂ
- Reservations & Guest Experience
- Oversee daily reservations, seating strategy, and guest flowÂ
- Maximize covers while protecting the guest experience and pacing of serviceÂ
- Manage VIPs, special occasions, and guest preferences with attention to detailÂ
- Partner with the culinary team to ensure seamless executionÂ
- OpenTable Management & Audits
- Maintain and audit OpenTable including floor plans, availability, and table configurationsÂ
- Ensure guest notes, preferences, and profiles are consistently updatedÂ
- Review reservation trends and optimize performanceÂ
- Monitor online reviews and guest feedback to drive continuous improvementÂ
- Service Excellence
- Actively lead the floor during service with strong presence and attention to detailÂ
- Ensure adherence to sequence of service and elevated hospitality standardsÂ
- Resolve guest concerns with professionalism and urgencyÂ
- Lead by example, creating memorable and personalized guest interactionsÂ
- Uniform & Grooming Standards
- Enforce uniform and grooming standards in alignment with Estate Yountville expectationsÂ
- Conduct daily checks to ensure a polished and professional presentationÂ
- Maintain a consistent luxury appearance across the teamÂ
- Inventory Management – Paper Goods & Supplies
- Oversee inventory and ordering of all front-of-house paper goods and operational supplies (e.g., menus, check presenters, napkins, to-go packaging, cleaning supplies)Â
- Maintain appropriate par levels to support service without overstockingÂ
- Conduct regular inventory counts and ensure proper storage and organizationÂ
- Work closely with purchasing and F&B leadership to control costs and reduce wasteÂ
- Ensure all supplies align with Clementine’s brand standards and presentationÂ
- Administrative & Operational Support
- Support implementation of SOPs and continuous improvement initiativesÂ
- Assist with cost control, ordering, and operational efficienciesÂ
- Participate in leadership meetings and contribute insightsÂ
- Ensure compliance with health, safety, and sanitation standardsÂ
REQUIRED QUALIFICATIONS
•   2–4 years of restaurant leadership experience in an upscale or luxury environmentÂ
•   Strong understanding of service standards and guest experienceÂ
•   Experience with OpenTable preferredÂ
•   Strong organizational, communication, and leadership skillsÂ
•   Detail-oriented with a hands-on, floor-focused approachÂ
•   Flexible schedule, including evenings, weekends, and holidaysÂ
PHYSICAL REQUIREMENTS
•   Ability to stand and walk for extended periods of time, including during long shifts
•   Frequent bending, reaching, twisting, and use of hands and arms to carry trays, serve food and beverages, and operate service equipment
•   Ability to lift, carry, push, and/or pull up to 25–50 pounds (trays, cases, kegs, furniture, or equipment)
•   Ability to work in a fast-paced environment while maintaining attention to detail and guest service standards
•   Ability to see, hear, and communicate clearly with guests and team members in a noisy environment
