Position Overview
The Sous Chef helps lead Wally’s high-volume kitchen operations while maintaining the food quality, safety, and hospitality standards that make Wally’s the Home of the Great American Road Trip.
This role partners closely with the Executive Chef and Executive Sous Chef to guide the kitchen team, ensure consistent product quality, and deliver an outstanding guest experience. The Sous Chef plays a key leadership role in developing team members, maintaining operational excellence, and creating a positive and productive work environment.

Key Responsibilities
• Support the Food Service Manager in leading daily kitchen operations
• Guide, coach, and mentor the kitchen team to maintain high performance standards
• Foster a positive workplace culture aligned with Wally’s policies and procedures
• Help recruit, onboard, and train new kitchen team members
• Ensure food quality consistently meets Wally’s standards across all offerings including popcorn, jerky, smoked meats, sausage, pizza, BBQ, bakery items, cold food preparation, and Wally Dogs
• Maintain strict food safety and sanitation standards, including certifications and documentation
• Assist with reviewing financial transactions, food cost, margins, and budgeting
• Support accurate and timely completion of food service operational reports
• Ensure daily tasks and operational goals are completed according to Wally’s SOPs
• Resolve guest concerns quickly and professionally while delivering outstanding hospitality
• Professionally interact with team members and support a collaborative work environment
• Support other departments as needed
• Perform additional duties as assigned
Position Requirements
• 2–3 years of food service experience and/or training
• Previous leadership or kitchen management experience preferred
• Ability to work in a fast-paced, high-volume environment
• Strong leadership, communication, and problem-solving skills
• Proficient computer skills including Microsoft Office
• Experience with POS systems and transaction devices
• Ability to work flexible schedules including weekends and holidays
• Ability to work rotating shifts as needed
• Ability to stand or walk for extended periods (8–12 hours)
• Must maintain regular and dependable attendance
• Must be able to perform essential job functions with or without reasonable accommodation
